Seafood Salad

Let’s get this out-of-the-way first. I grew up with “imitation” crab meat. I don’t think I ever tasted real crab or lobster until I was well into my 20s. It was just what we had. Now, I know there is this thing about real crab versus imitation crab. I get it. Real crab is delicious. But, there is nothing wrong with imitation crab. No, it is not crab meat but rather fish formed into crab like pieces but it tastes fine. No, it does not taste like real crab but there is nothing wrong with liking imitation crab or eating it.  I especially think in a Seafood Salad such as this (see, I didn’t call it Crab Salad so the purists could complain) it tastes great and is much more economical than real crab.

So, both of my kids were a bit hesitant about this meal. They don’t particularly care for mayonnaise based salads. I was hoping the flavor of the dill would win out and they would like it.

Verdict:

They liked it! My daughter actually wanted more dill in hers but everyone else thought it was perfect just they way it was. Next time I will give her the dill and a small bowl and let her make it to her tastes.

I served this on a toasted roll with potato salad and pickles. We made a whole picnic meal out of this.

Seafood Salad

  • Servings: 4-6
  • Difficulty: easy

Ingredients:

  • 2 lbs. imitation crab meat, chopped
  • 2/3 cup mayonnaise
  • 3 stalks of celery, finely diced
  • 1 1/4 teaspoons dill
  • 1 teaspoon Old Bay Seasoning
  • black pepper to taste
  • 6-8 sub rolls, toasted if desired
  • lettuce, onion or tomato, if desired

Directions:

  1. Mix all ingredients in a bowl. Taste and adjust spices to your liking. Serve immediately or refrigerate until ready to serve.

      Understand but in the Midwest real seafood – other than Red Lobster is hard to come by. 🙂

          Our closest seafood market is 90 miles away. We visit once or twice a year but usually eat it right there in their cafe rather than bring it home.

              Not so bad. 90 miles one way to Chicago, 90 miles the other way to Grand Rapids. Both nice cities with lots to do.

    I started buying imitation crab when I started trying to lose weight, it’s not bad and you’re so right when it comes to cost and!!! the fact that decent seafood isn’t easy to come across in the Midwest!
