My family is big on flavor. They like spicy, bold, and even vinegary flavors. It doesn’t matter as long as it has lots of great flavors going on. This meal fit the bill perfectly. As we were shopping for rolls and crumbly blue cheese my daughter picked up two packages of blue cheese. I told her we only needed one. “I know,” she replied, “One is for me to eat before dinner.” Yes, my kids will eat blue cheese straight from the container.
Verdict:
I make Buffalo Chicken, in different forms, several times a year. This one tasted particularly good. I think I finally have the slow cooker recipe perfected and the addition of the Hawaiian rolls made this over the top delicious!
If you don’t have Hawaiian rolls you can use regular rolls but the slight sweetness in the bun with the tang of the hot sauce and the sharpness of the blue cheese was a perfect bite. I am even considering making these for a party because the chicken can be kept warm in the slow cooker and each person can customize their own sandwich with ranch, blue cheese or even bacon ranch dressing! They are not too saucy either to create a mess like chicken wings sometimes can.
I served this with carrots and celery on the side with extra ranch dressing for dipping.
Slow Cooker Buffalo Chicken Sliders
Ingredients:
- 2 lbs. chicken breasts (boneless and skinless)
- 1+ cups hot sauce, divided
- 4 tablespoons butter
- 1 1/2 teaspoons garlic powder
- 1/4-1/2 cup water
- Hawaiian Rolls or small rolls
- Crumbled Blue Cheese, if desired
- Ranch Dressing, if desired
Directions:
- Place chicken breasts in bottom of slow cooker bowl. Pour 1/2 cup of hot sauce over the chicken. Cook on low 6-8 hours until cooked completely through.
- Remove chicken from slow cooker and drain off any liquid in the slow cooker. Replace chicken in slow cooker and shred with two forks. Add 1/2 cup+ of hot sauce (to taste), butter, and powdered garlic. Stir well. Cover and turn to high if serving soon to heat through. If you are letting it sit to serve later add a bit of water and stir well. Check occasionally to see that the dish does not dry out if left to serve later.
- Serve on Hawaiian rolls with blue cheese and ranch dressing if desired.

WOW, it amazes me that folks on the mainland like what we call King’s Bakery Portuguese Sweet Bread from Hawaii. I’ve eaten this most of my live. The loaf style, sliced, makes ONO (delicious) French Toast! Try it with some Coconut Syrup, MMM!

I’ve found the loafs, either the traditional round or thick, Texas Toast-style slices at Walmart. I’m telling you, THE best French Toast on Earth! Let me know how you do… 🙂
