You all know I am all about saving time in the kitchen. When I was at the dentist the other day the dental assistant was asking me about what my children like to do. As I was rattling off the list of their activities she asked, “Do you eat out all the time?” I laughed and told her that we actually rarely eat out. She was floored. It’s true. I told her and the dentist about planning ahead, using my slow cooker and prepping meals ahead of time when I can.

This was one of those days. Looking at the calendar I knew I had some extra time the other night and that the next night was packed full. I swapped the meals I was going to serve – the Loco Moco and the Pizza Stuffed Shells (recipe tomorrow!). I knew that I could prep the entire meal for Pizza Stuffed Shells and store it in the refrigerator for dinner the next night. I would pop it in the oven and heat it for 20-25 minutes when we got home and dinner would be ready. The Loco Moco was a bit more hands on so while the rice and hamburgers were cooking I could stuff shells. Perfect!

Remember, I am a home cook just playing a game with my family. I am telling you what I do and if you can make it work for you great! I take these pictures as I am setting the plates on the table, so yes that is a paper plate! A girl’s got to do what a girl’s got to do to get dinner on the table.

Verdict:

Okay. I thought this dish sounded weird. Hamburgers on a bed of rice with onion gravy and a fried egg? A Disney friend said she had it in Hawaii and if you ever got a chance to try it to do it! I knew we were not getting to Hawaii but I researched the dish and thought it sounded rather easy and “interesting.” It seems to be found at many  fast food places and can also be made with spam instead of the hamburger or chicken and chicken gravy in place of the hamburger. I thought I would try something more traditional.

It was really good. I cooked the eggs to more over-fried than soft fried but the kids prefer the eggs that way. Even my onion hating daughter liked the gravy because it tasted like French onion soup – one of her favorites.

I served this with a green side salad and a sliced veggie plate on the side.

Loco Moco

  • Servings: 6-8
  • Difficulty: easy

Ingredients:

  • 1 1/2 -2 lbs. ground beef
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 cup bread crumbs
  • 2 large eggs (for hamburgers)
  • 8 eggs for tops of burgers
  • 2 tablespoons butter
  • 1 large sweet onion, sliced
  • 3 cups beef stock
  • salt and pepper to taste
  • 1+ tablespoon cornstarch and 1+ tablespoon cold water
  • 1 1/2 rice (I used brown rice)
  • water to make rice

Directions:

  1. Mix the ground beef, Worcestershire sauce, garlic powder, onion powder, bread crumbs and 2 eggs together until well combined. Form into 8 patties and set aside.
  2. Begin cooking rice according to package directions.  Preheat oven to 170 or to keep warm on your oven.
  3. Fry patties in a large skillet 3-4 at a time. Remove patties from pan once they are cooked through. Place on a plate in oven to keep warm.
  4. Once all patties are cooked and removed from skillet add onions to hamburger grease. Cook on medium low until onions are browning on edges and wilted. Add beef stock to pan. Raise heat to medium-high and allow it to come to a simmer. Mix cornstarch and water in a small bowl until cornstarch dissolves. Stir this slurry into the onion mixture. Lower heat to medium and continue stirring until gravy is desired consistency. This may take 5-10 minutes. If it still doesn’t thicken add more of the cornstarch and water mixture one teaspoon at a time until desired consistency is reached. Season as desired with salt, pepper, or garlic powder.
  5. In a second skillet melt butter. Break eggs one at a time into skillet to fry. I can do 2-3 at a time in my skillet. Cook to desired consistency. If you like your eggs over easy that is fine but my family prefers them turned over and cooked hard.
  6. To plate, add rice to plate and top with a hamburger. Add onion gravy and place the egg on top. Serve hot!

  3. We were in Hawaii almost 10 years ago and I saw Loco Moco on a lot of menus. I never tried it while we were there but maybe I’ll give your recipe a try since I’m not sure if I’ll ever make it back there! Thanks for posting!

  5. Hooey, I bet that was very filling! But I agree, an egg on most things just brings it over the top. I could eat a Loco Moco right now, in fact. But I’ll have to settle for leftover frozen zucchini lasagna, lol. I had to work late tonight. Great recipe!

    Oh my gravy all over my two scoops rice (that’s OMG! in my world)!!! MARCI!!! You’ve gone “local” on me! Loco Moco is DA BOMB!!! In Hawaii, we eat that for breakfast, lunch or dinner, no matter the time of day, it’s ONO (that delicious in Hawaiian)! And yes, there are many, many variations to the original… two scoop steamed white rice, one hamburger patty, one over easy (to medium) egg and brown gravy ALL OVER (even the egg)!! We LOVE our gravy in Hawaii. I say, good for you! Try foods from other regions, other cultures, it’s exciting and tasty too. ALOHA!

      Thank you! I had never heard of it until a friend came back and said you have to try this. Glad I did! I am always taking suggestions of other things to try. Keeping the game of a different meal each weeknight means I need lots of things to try.
