Slow Cooker Coca-Cola Ribs

Yesterday was amazing here in Southwest Michigan! The sun was shining it was warm. It was 54 degrees at 3:49 pm when I went to pick my son up from his Science Olympiad meeting. I had on a turtleneck and light sweater. No, winter jacket. I know this will not last long but we have to take advantage of every single moment and soak up the sun and fresh air.

So, before we begin, I did not take this picture. This is my family helping me out. They know not to touch their plates until I have taken a picture of the meal. I wasn’t home when they served dinner so they took a picture for me. Aren’t they sweet? The thing at the top of the plate is a hot dog. There was some miscommunication over what I had planned for dinner and then for a party. I wanted to make chili dog stuffed potatoes for the party. They thought I meant hot dogs and chili potatoes for dinner. Oh, well.

This past week our local grocery store had Buy One, Get One (BOGO) pork ribs. Not only were they BOGO but they were also $1.49 a pound! When we go grocery shopping we tend to split the lists in half to make our time in the store much shorter. Well, we both had pork ribs on our lists and we ended up with 4 giant packages of ribs! We will be eating lots of ribs this month.

I needed a quick go to meal for my family that I could throw in the slow cooker because only two, of the four of us were going to make it how for dinner. My daughter had a dance class and we were not going to be home until about 10:00 pm so I decided a slow cooker meal that my son and partner could eat when they got home was the best option.

Sometimes, simple is the way to go. This meal had 3 ingredients plus spices, as desired.

Verdict:

This was a good meal. Nothing fancy. Nothing over the top – “I must have this meal again and again.” But, a good solid meal that was super SIMPLE to make. The meat was falling off the bones by the time my family went to eat. The meat had been in the slow cooker about 9 hours. You can cook it for less time and it will still be done after about 7 hours (depending on the size of your ribs) and still on the bone if you prefer.

This was served with chili potatoes, a hot dog (Haha) and a green side salad.

Slow Cooker Coca-Cola Ribs

  • Servings: 4-6
  • Difficulty: easy
  • Print

Ingredients:

  • Pork spare ribs, cut to fit in your slow cooker
  • 1 (18 oz) bottle Sweet Baby Ray’s Barbecue Sauce or your favorite homemade sauce or bottled sauce
  • 1 cup Coca-Cola soda or other favorite soda (no diet soda – must be full sugar)
  • salt, pepper or red pepper as desired

Directions:

  1. Place spare ribs in bottom of slow cooker.
  2. Pour barbecue sauce over ribs. Pour in soda. Stir sauce gently. Cover and cook for 6-8 hours on low or 3-4 hours on high. Length of cooking time will vary with amount of ribs and size.
  3. Remove from slow cooker, taste and adjust spices before serving.

      Thank you! Yes, dance three days a week (an hour plus drive each way), three days of instrumental lessons, two days of Science Olympiad, a Lake Michigan Youth Orchestra rehearsal and a partridge in a pear tree.

      1. Certain things are a “no no” in our house because of his high blood pressure and my health. I torture him with fish dishes and lean meat. I know he cheats any chance he gets during the day 🙂

    This sounds like a great meal that my wife and my boy will just LOVE!. Please tell me what adding the Coca-Cola does for the meat. I’ve never tried that before.

      Thanks! The Coke adds a bit of sweetness and is a meat tenderizer. If you are using cheaper cuts (generally tougher) adding Coke can help tenderize it. Works on roasts too!

        That’s a great tip!! Does it matter how much you use? Could I put a 12oz. can’s worth in with a 4lb roast?

          I used 1 cup oz. for 3-4 lbs of boned spare ribs. I think you would be fine with a 12oz can on a four lb. roast.

    Yummy, loving the coke and Sweet Baby rays BBQ sauce ( my favourite)! I love simple recipes and any excuse to use fizzy pop! Dr Pepper and Cherry Coke would be good to use as well.

  7. The hot dog just cracks me up, lol! But I am grumbling here over your weather, we had 5 more inches of snow today. Grumble grumble. 😀 But the pork sounds fantastic!

      It was funny. I saw the picture and asked,”Is that a hotdog?” When they told me why I laughed for 10 minutes at them.
