Pesto Breakfast Pizza

Last night was the first time since sometime in March that we were all home before 8 pm. It was so nice to have all four of us sitting down around the table to eat together. We know it isn’t going to happen again for a few weeks but it was so nice to be together for one meal.

Now, I am real, so as you can see in the picture below, I pulled out our finest paper plates last night so no one had to do dishes. After dinner the only clean up was the pizza stone, pizza cutter, and the cheese grater. I am all for easy dinners with super simple clean up!

Verdict:

When I first presented this meal to my family they all thought I was crazy. Egg, that is not scrambled, on a pizza? Ewww. But, then they tasted it. I over cooked the egg a bit because I was afraid of serving them soft eggs to begin with but both kids said next time they want the soft egg to dip their crusts in.

Everyone loved how the egg added creaminess to the entire dish. Next time I will add a fourth or fifth egg, if the eggs don’t spread enough as these did not, to get better coverage with the egg.

Pesto Breakfast Pizza

Ingredients: 

  • 1 one pound ball of pizza dough
  • 1/2 cup pesto, jarred or homemade
  • a blend of mozzarella, monterey, and Parmesan cheese, freshly shredded (about 2/3 cup or more to suit your taste)
  • 2-6 large eggs
  • freshly grated black pepper and salt, to taste

Directions:

  1. Preheat oven to 400 degrees.
  2. Stretch dough on pizza stone or grease baking sheet to form large circle. Bake for 3-4 minutes to set crust.
  3. Remove pizza crust from oven and spread with pesto leaving 1/4″ crust around edges. Sprinkle with cheeses. Bake for 5 minutes to melt cheeses.
  4. Remove pizza from oven. Break eggs over pizza. Use 2-6 eggs depending on the size of your pizza and how much they spread. You want eggs to cover most of the pizza but not be too thick to cook through. Return pizza to oven and bake 3-6 minutes (depending on how well done you would like your yolks.
  5. Remove pizza from oven and allow to rest for 3-4 minutes before cutting. Serve hot with freshly grated black pepper over the top.
