Slow Cooker Sweet and Sour Meatballs with Rice

This is a remake version of a recipe I used to make years ago. I lost the recipe about 10 years ago and forgot all about it. The other day we started talking about different dishes I haven’t made in a long time and this was mentioned so I decided to try to recreate it. I could find nothing on-line that was similar to what I used to make. So, I decided to improvise from what I could remember.

Verdict:

I had my daughter taste the sauce for balance and when I heard the “Mmmmm,” I knew it was going to be okay. I used to make this recipe either on the stove top or slow cooker during the late summer/early fall because it was quick and easy especially using instant rice. I had my daughter go into the store the other day just to buy the rice for this recipe and she had no idea what instant rice was! I forgot how long it has been since I have used it.

Serve this with a green vegetable and salad for a complete meal.

Slow Cooker Sweet and Sour Meatballs with Rice

Ingredients:

  • 1 1/2 lbs or so of 1/2 oz meatballs, frozen
  • 1 red pepper, rough chop
  • 1 green pepper, rough chop
  • 1 1/2 cups ketchup
  • 1/2 cup apple cider vinegar
  • 1 (16 oz) can pineapple, drained
  • 2/3 cup brown sugar
  • 1/2 cup chicken stock
  • 2 cups instant rice

Directions:

  1. Mix meatballs, red pepper, green pepper, ketchup, vinegar, pineapple, brown sugar and chicken stock in slow cooker. Cook on low for 2 1/2 – 3 hours.
  2.  Stir sauce well and taste. Adjust spices as necessary to your liking. Try adding more sugar, vinegar, or a slash of soy sauce to the sauce to suit your tastes. Mix rice into slow cooker. Cover and cook for 40-45 minutes. Stir once or twice while cooking if possible.
  3. Serve hot.

      We use the local grocery store brand, Meijer, because they are gluten free for me so .

  4. Sounds delicious, Marci. I assume you could make the meatballs if you wanted to – I can’t think that I have ever seen frozen meatballs in South Africa.

      Yes. I would not cook it as long in the slow cooker (they may crumble) or make it on the stove top. 🙂
