Old Fashioned Chicken and Rice Casserole

If you grew up any time during the 1960s, 70s or even 80s you probably had some version of this dish for dinner at one time or another. The soups may have varied and the toppings may have varied but it was a standard meal in many homes. We were talking about this dish the other night and decided to dig out the old recipe from the label on the can.

I I had my daughter make the recipe just to see how easy it was. When we were done she wouldn’t even try it once it was cooked. She hated the smell and texture of the canned soups when she was making the casserole that she absolutely refused to eat it. Not even one bite. f you have been following my blog for any length of time you know I am an advocate for not using cans of stuff, packets of mixes, or jars of sauce when you don’t need to. If you have the time and ingredients on hand making those things from fresh always tastes better. She is used to making the sauce with butter, flour, milk, and chicken stock plus mushrooms or pieces of chicken depending on the flavor we want. She thought the cans of condensed soup were too much. But, that being said there are times when you need a quick meal that will feed your family in the easiest and quickest way possible. This is one of those recipes.

Verdict:

But, from the rest of my family I got a text telling me how delicious and amazing the casserole was. This was one of those nights we were eating in shifts and I had left the casserole in the refrigerator for the first shift to bake when they got home. They both loved it so much they had two huge servings. I guess it all depends on what your tastes are because they thought this was one of the best rice casseroles ever.

Serve this with a green vegetable such as steamed broccoli and a green salad for a complete meal.

Old Fashioned Chicken and Rice Casserole

Ingredients:

  • 3-4 cups chicken, cooked and chopped (breasts, tenders, thighs are all good for this recipe)
  • 1 (10.75 oz) can condensed  cream of chicken soup
  • 1 (10.75 oz) can condensed cream of celery soup
  • 1 (10.75 oz) can condensed cream of mushroom soup
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 2 cups milk
  • 2 cups instant rice, uncooked
  • 3/4 cup Parmesan cheese
  • 1/2 cup fried onions, if desired

Directions:

  1. Preheat oven to 400 degrees. Spray a 13 x 9 casserole dish with non-stick spray.
  2. Mix chicken, soups, onion powder, garlic powder, black pepper, milk, and rice in a large bowl until well combined. Pour into casserole dish.
  3. Sprinkle top with grated Parmesan cheese. If you are using fried onions put them on 5-10 minutes before the end of the baking time to stay crispy but not burn.
  4. Bake uncovered for 40 to 50 minutes. Allow to rest for 3-5 minutes before serving.

    This was always my favorite meal as a kid. It sure does fill everyone up and tastes so good, too! We would always switch out between chicken and pork chops to be used—both are really good.

      We never had pork chops growing up. We eat them all the time now. I will have to ask my mother why some day. 🙂

  4. I have made a version of this when my kids were little. I saute the chicken thighs first add all the other ingredients then pop it in the oven all in one pan.

    He-Man can’t eat mushrooms anymore so, I’d have to modify it and leave that out.

    Interesting that your daughter wouldn’t even try it after spending the time making it. 🙂 A delicate palette your budding chef has. 🙂

      I think it was the smell of the canned soup and the texture of it. Definitely different than making the homemade sauce.

      I thought it was weird but she absolutely refused. She kept telling me as she dumped the cans in how she didn’t like the texture as they came out. I honestly thought once it was cooked she would get over it.

        The texture is weird. But, I guess because we’ve been using them for years, maybe we don’t notice? I’m definitely going to look at the ingredients next time just to see what gives them such a long shelf life. Love the convenience though. 🙂

      Yes. They never really have canned soup and I rarely use it in recipes so she never had to cook with it before. It was eye opening for her.
