I used this recipe for P.F. Chang’s Chicken-Lettuce Wraps (click to link original recipe) from Food.com as a basis for my P.F. Changesque Chicken Wraps.
Verdict:
My family really liked this dish. Though they said it was “similar” to P.F. Chang’s, but it was NOT P.F. Chang’s Chicken Lettuce Wraps.
Next time I will chunk the chicken in 1″ pieces fry it then put it in the food processor for a few moments to break it down into smaller pieces. It took so long to cut the chicken down into small bits that I really didn’t feel were small enough but were as tiny as I could get them.
P.F. Chang's Chicken Lettuce Wraps (copy cat)
MARINADE
- 2 Tablespoons cornstarch
- 1/4 cup sherry wine
- 1/4 cup chicken stock (low or no salt version) may also use water
- 1/4 cup soy sauce
FILLING INGREDIENTS
- 1 1/2 lbs boneless skinless chicken breasts , diced small
- 5 tablespoons vegetable oil
- 2 teaspoons garlic , minced
- 1/2 cup green onion , minced
- 1 cup mushrooms , minced
- 1 (8 ounce) can water chestnuts , minced
- 1 (6 ounce) package fried Chinese rice noodles
COOKING SAUCE (double recipe if your family likes a lot of sauce)
- 1 tablespoon hoisin sauce
- 1 tablespoon soy sauce
- 1 tablespoon sherry wine
- 2 tablespoons oyster sauce
- 2 tablespoons water
- 1 teaspoon sugar
- 2 teaspoons cornstarch
- lettuce leaf , washed and taken off the head but left whole
Directions:

Mix all ingredients for the sauce and set aside.

In medium bowl, combine marinade ingredients and mix well. Add chicken and stir to coat thoroughly. Stir in 1 t. oil and let sit for 15 minutes.

Heat wok or large skillet over medium-high heat. Add 3 T. oil, then add chicken and stir-fry for about 3-4 minutes until cooked through. Remove chicken from pan and set aside.

Add 2 T. oil to the pan if needed. Add garlic, and onion and stir-fry for a minute or so until fragrant. Add mushrooms and water chestnuts stir-fry an additional 2 minutes. Return chicken to the pan. Add mixed cooking sauce to the pan. Cook until thickened and hot. Serve along side lettuce leaves for everyone to take what they want. Spoon chicken mixture into lettuce leaf and roll (like a burrito) individually. Add fried rice noodles to top if desired.
Sounds delicious 😋 My family won’t eat mushrooms though. Any ideas on what I could substitute?

I would just leave them out. I don’t care for mushrooms either and they did not add much to the dish. Maybe if you want a substitute some bamboo shoots for texture.

You know what? Maybe get your kids to cut them down to tiny tiny tiny pieces! Lol It does take a long time to make bite sizes pieces…….I go through that every time I make burritos!!

Lovely recipe. You know even I don’t like to chop chicken into tiny pieces as it can take up a lot of time. I like your tip of using the food processor after frying them.
