Watermelon and Feta Salad with Balsamic Reduction

We had this salad at the Food & Garden Festival in Epcot, Disney World, in April. My son loved it so much I told him when we got home I would make it for him. Well, I saw watermelons on sale the other day and picked up one that looked nice and let it sit on my counter for a day or two. I knew I needed to use the watermelon before it turned so I decided to make the salad last night.

We had fresh greens from our Community Supported Agriculture (CSA) share to go with it so it was a perfect night for this dish!

Verdict:

The entire family was surprised at how much they liked the salad and that I ate it willingly! My son said it was the bitterness of the greens with the saltiness of the feta and the sweetness of the watermelon that made it yummy.

We served this before our meal and it was a nice refreshing start to the meal.

Watermelon and Feta Salad with Balsamic Reduction

  • Difficulty: easy

Ingredients:

  • 1 1/2 cups watermelon, cut into chunks
  • 6 cups greens, (arugula, baby greens or micro greens are particularly good)
  • 3 oz. feta, cut into small pieces
  • black pepper, freshly ground
  • 1/2 cup balsamic vinegar
  • 2 tablespoons honey

Directions:

  1. To make balsamic reduction – in a small saucepan over medium heat stir together balsamic vinegar and honey. Bring to a slow simmer and allow to reduce until it is a thick syrup. Stir often to avoid burning. Remove reduction from heat and allow to cool.
  2. Make salad in a large bowl stirring well. Then drizzle cooled balsamic reduction over salad. Serve.

      My family loved it but we all like watermelon. If you want try it maybe start with just a little bit of watermelon and if you like it add the rest, if not you still have a nice salad.

  7. Blog idea? I love the blog about your families original rules regarding recipes. Now living in California I don’t appreciate the seasons. We have miserable peaches year round. I would love to see what you do seasonally fresh.
