Parmesan Chicken with Garlic Kale and Spinach

Things are a bit hectic this week. My daughter left for camp yesterday. I took her up and dropped her off. It was a bit bitter-sweet as I realized that this would probably be her last summer at this camp (even thought she could attend one more season after her senior year) but I know she is going to be busy getting ready for the next phase of her life. The lasts are slowly starting but I know there is so much good ahead for her.

I also have a big birthday coming up on Monday. To celebrate I have invited my college friends, local friends and dance moms to dinner. We will have company for about a week. I have been planning for this all week. The first people arrive on Friday. So, blog posts may be sporadic for about a week. But, first I have to tell you about this wonderful meal.

Verdict:

When your son says he wanted more kale and spinach you know you have a good meal. The flavors were so good. Of course we love garlic and this has quite a bit of it! It was good even heated up the next day for lunch.

Serve this with a nice green salad and a vegetable for a delicious meal!

Parmesan Chicken with Garlic Kale and Spinach

Ingredients:

  • 1 1/2 lbs. chicken breast, cut into strips
  • 1 bunch of kale, stems and tough parts removed
  • 2 cups spinach
  • 4 garlic cloves
  • 1 onion, diced
  • 3 tablespoons olive oil
  • 1/2 cup + Parmesan cheese, freshly grated
  • 1/2 cup white wine
  • red pepper flakes, if desired
  • 1 tablespoon lemon juice
  • salt and pepper, to taste

Directions:

  1. Heat olive oil in a pan over medium heat. Add chicken and saute until cooked through, about 6 to 8 minutes. Remove chicken from pan and keep warm.
  2. Add onion, garlic and red pepper flakes to the pan. Return pan to heat and cook until the onions are softened about 2-3 minutes. Add kale, spinach, wine, and salt to pan. Stir well. Cover and cook for 8-10 minutes until kale and spinach are tender and to your liking.
  3. Return chicken to pan. Add Parmesan cheese and lemon to pan and stir well. Taste and adjust spices as necessary. Serve warm.

  2. Nice dish, Marci. It is definitely sad when our kids move from one stage to the next but there are good things ahead for them.
