Slow Cooker Ground Beef and Hash Brown Dinner

Yesterday we went and picked my daughter up after she has been at camp for the past 12 days. It was wonderful to see her! This was her fourth year and probably last time at this camp. Though she is still eligible to go next year, she will probably be too busy with getting ready for college and working. She was very  aware of this going to camp and wanted to make the most of this last camp experience. She most certainly did!

She Irish danced in the camper talent show in front of about 1,400 kids. She sang a small group solo with the SATB choir. She made some new friends and deepened relationships with some campers she knew before. I am so very proud of all she did while there.

After her concert we headed home. I had made a slow cooker dinner knowing that she would be hungry and want a home cooked meal. This was perfect. It was overcooked a bit, it was on for 10 hours rather than 6 hours, but the only thing it did was make the hash browns more like mashed potatoes which we all liked the flavor.

Verdict:

The consensus was this was a good dish. It had good flavor and the first thing my daughter said when she tasted it was that it reminded her of hash which is what it basically is. Both kids asked for this again and said even if I thought it was overcooked it tasted good. It was super simple to make and can easily be made the night before you want to cook it for dinner.

We cooked and layered everything in the bowl of the slow cooker, covered it and refrigerated it until the next day when we placed the bowl in the slow cooker. If you have a programmable slow cooker have it switch to keep warm after 6-7 hours so that the potatoes don’t become mashed like ours did.

Serve this with a green vegetable and a green side salad to complete the meal.

Slow Cooker Ground Beef and Hash Brown Dinner

Ingredients:

  • 1 1/2 lbs. ground beef
  • 1 onion, medium, diced
  • 1 packet brown gravy
  • 1 (16 oz) can creamed corn
  • 1 1/2 cups sharp cheddar cheese
  • 1 package shredded potatoes, if frozen – thawed
  • 4 tablespoons butter
  • 1 cup half and half
  • 1 teaspoon garlic powder
  • 2 cups chicken broth
  • 2/3 cup flour
  • salt and pepper to taste

Directions:

  1. Cook ground beef and onion in a skillet over medium heat. Break the ground beef into small pieces as it cooks.  Once beef is cooked use a slotted spoon to remove ground beef and onion from pan to bowl of the slow cooker.
  2. Mix the ground beef, onion and gravy packet together in the slow cooker.
  3. Cover the meat with the can of creamed corn.
  4. Sprinkle corn with 1/2 of the cheddar cheese.
  5. Place 1/2 of the potatoes on top of the cheddar cheese.
  6. In a saucepan melt the butter over medium heat. Add half and half, garlic powder, and chicken stock to the pan. Mix well as it warms. Once mixture is warm slowly whisk in the flour in small batches. Whisk constantly to keep it smooth. Lightly simmer mixture until it thickens to the consistency of canned soup mix. Taste and add salt and pepper as needed.
  7. Pour 1/2 of this mixture over the potatoes in the slow cooker.
  8. Add the rest of the potatoes and cover with the cheese, some more salt and black pepper and the rest of the soup like mixture.
  9. Cover and cook on low for 6-7 hours. Serve hot.

      The slow cooker uses about the same electricity as one light bulb. So no bad!
