Reuben Pizza on a Pretzel Crust

I found a corned beef in the freezer! Yes, this is super exciting for my family. It means a break from chicken and ground beef for dinner.

I try to only do a big shop once a month. So as we start to get to the bottom of the freezer I am looking for different dishes I can make with what we have on hand in the pantry and freezer. This dish was perfect for that. I still had 2 corned beef in the freezer and a big bag of sauerkraut in the refrigerator.  Perfect for a Reuben pizza.

As I started to make the pizza crust I thought why not change things up a bit and try a pretzel dough crust. It is not brown like a pretzel because for it to brown like a pretzel you need to boil the rolled crust in baking soda and water. I do not have a big enough pan to boil a pizza crust in.  So, it is a pretzel dough pizza crust just not browned like you may expect.

Verdict:

This was a hit with the family. It is VERY filling. Each person only ate two smallish slices. My family likes to eat so this tells you how filling it really is. Some of us added an extra drizzle of Russian dressing over the top some preferred it without. Over all this was a delicious dish with plenty of leftovers for lunch the next day.

We served this with a green side salad to complete the meal.

Reuben Pizza with a Pretzel Crust

  • Servings: 8-10 slices
  • Difficulty: easy

Ingredients:

  • 2-3 cups corned beef, cooked and finely diced or chopped (great for leftovers!)
  • 1 cup Swiss cheese, shredded
  • 1 cup Mozzarella cheese, shredded
  • 1/2 – 3/4 cup Russian dressing, plus extra for serving, if desired
  • 2 cups sauerkraut, squeezed and dried

Pretzel dough (for dough maker):

  • 1 cup warm (80 degree) water
  • 2 tablespoons oil
  • 3 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1 egg white
  • 1 packet of dry yeast

Directions for Dough:

  1. Place ingredients in  bread maker in the best order for your bread maker.
  2. Use setting for 1 lb. dough or pizza dough if your bread maker has one.
  3. Once bread maker has stopped remove dough from bread maker and place on a pizza stone dusted with corn meal or a greased rimmed baking sheet. Stretch dough to large circle with slightly thicker edges. Poke holes with fork and bake at 400 degrees for 3 to 5 minutes to set dough. Remove pan from oven.

Directions for Pizza:

  1. Once crust has set and been removed from oven spread Russian dressing over pizza. Use more or less to taste.
  2. Sprinkle sauerkraut over dressing.
  3. Place corned beef over top of sauerkraut in an even layer.
  4. Cover corned beef with Swiss cheese and Mozzarella cheese.
  5. Bake at 400 degrees for 12-15 minutes until cheese has melted and crust is turning golden.
  6. Remove pan from oven and allow to sit for 3 to 5 minutes before cutting.

  1. Sounds delicious. I love Reubens. How do you only shop once a month? I find it hard to shop bi weekly even. I freeze bread too.

      Thank you! I do a HUGE shop $500 once a month and have a CSA share that is delivered weekly. I fill in shop for milk, fruit, and other perishables as needed but try to stick to the outside of the store and not go up and down the aisles to keep from impulse purchases. I try to keep it to every other week but sometimes I end up at the store weekly if the kids drank all the milk.

      1. Your system sounds good. I pick up groceries I buy online but still go to Costco biweekly. My 5 yr old eats like an adult already. His brother makes up for it.

      Thank you! It takes some planning and knowing what I want to make for the month and keeping a well stocked pantry. Grocery shopping has always been my least favorite chore so I try to do it as little as possible.

  6. I always jokingly say if I ever stop being a vegetarian it’s a toss up between a reuben and fried chicken. I love the idea of the pretzel crust. Maybe I can do a veg version with mushrooms. 🙂
