Ground Beef and Broccoli

Back to ground beef again. Don’t have leftover beef for beef and broccoli or just have some ground beef in your refrigerator and still want the flavor or Beef and Broccoli? Ground beef and broccoli is the perfect substitute. It gives you all the flavor of Beef and Broccoli without the expense of the steak.

Verdict:

I was leery of this dish. Admittedly so was my family. But, in the end if turned out fine and every one loved it. No, it is not Beef and Broccoli but for a substitute it was perfect. It had all the flavors of the traditional beef and broccoli but with ingredients I had on hand at home.

I served this over brown rice with a plate of raw vegetables to complete the meal.

Ground Beef and Broccoli

  • Servings: 6-8

Ingredients:

  • 1 1/2 cups rice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar, packed
  • 3 cloves garlic, minced finely
  • 1/2 teaspoon powdered ginger
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons sesame oil
  • pinch of red pepper, if desired
  • 1 1/2 lbs. ground beef
  • 1 extra large head broccoli, cut into small florets
  • green onions, if desired for serving

Directions:

  1. Cook rice according to package directions.
  2. In a large skillet brown ground beef  over medium heat breaking it into small pieces as it cooks. Drain any fat off ground beef when done cooking.
  3. In a small bowl mix together soy sauce, brown sugar, garlic, ginger, rice wine vinegar, sesame oil
  4. Add broccoli, sauce and rice to pan. Stir well.

  3. This looks really good, I will have to try and make it. My son is really picky but he might like this since he loves broccoli!

      Taste it as you go along so the ginger or soy is not too strong if you are worried. Adding more is easy taking away, not so easy. Hope he likes it.
