Blueberry Goat Cheese Salad with Lemon Honey Dressing

If you have read the home page (click for link to page) you know I started the game of making different meals each night as a way to stretch myself and my family with what we were eating. I could see my ASD son heading down the path of beige food and didn’t want him to end up like me.

Honestly, up until about a year ago I would not have even tasted this salad. I never tried goat cheese until last year. I LOVE cheese. But, the name? GOAT cheese turned me off. You know what? Once I got past the name I love it!

We were served this salad over the weekend at a family gathering for our niece’s wedding. My family loved it so much I came home and decided to recreate the salad the best I could.

Verdict:

The family loved this so much! I made sweetened almonds for the top of the salad that added a nice sweet crunch. Yummy!

If you don’t like goat cheese you do not have to add it to the salad. It is perfectly delicious without it too.

Blueberry Goat Cheese Salad with Lemon Honey Dressing

  • Servings: 4-5

Ingredients:

Sweetened Almonds:

  • 6 oz. slivered almonds
  • 1 1/2 tablespoons honey
  • 1 teaspoon melted butter
  • sprinkling of salt

Dressing:

  • 3 -4 tablespoons of lemon juice (from a lemon if possible)
  • 1 clove garlic, minced finely
  • salt & black pepper, to taste
  • 1/4 cup honey
  • 1/2 cup olive oil

Salad:

  • spinach, arugula, and baby greens to your liking
  • 1 1/2 cups blueberries
  • 4 oz. goat cheese, crumbled into small pieces

Directions:

  1. Preheat oven to 350 degrees. Cover a rimmed baking sheet with aluminum foil.
  2. Mix all almond ingredients in a bowl. Spread almonds on baking sheet. Bake for 4 minutes and then stir. Bake an addition 3-4 minutes. Almonds should be browned but NOT burnt. Watch them carefully. Remove from oven and place in a bowl.
  3. Place lemon juice and garlic in a bowl for 5 minutes. The lemon juice mellows the garlic a bit so do not skip this step.
  4. While waiting for the garlic to finish place greens, blueberries, and goat cheese in a large bowl.
  5. Once garlic has mellowed mix rest of the salad dressing ingredients in with the garlic and lemon juice. Mix well. Pour desired amount of dressing over the greens. Mix well.
  6. Plate salad and sprinkle with sweetened almonds before serving.

    I LOVE Goat cheese. My dad owns a goat farm! He makes cheese, soaps, lotions… Love it all. This recipe sounds like a perfect end of summer salad!

  8. Yum! This sounds like a dessert salad! I love Goat cheese…almost all cheese…except for that really, really stinky one I tried in France. It smelled like really dirty feet, and tasted like it too. But, you know I’ll eat anything that doesn’t eat me first so, I had to try it. I think like mushrooms it’s an acquired taste. 🙂
