Drunken Pork Chops

Notice the “Drunken” theme lately? My birthday was early last month and I received LOTS of alcohol in all different forms for my birthday. So, wine in The Drunken Noodles (click for link to post) the other night and beer in the Drunken Pork Chops last night. I don’t drink much so expect to see lots of cooking with alcohol over the next few months!

Pork chops were the sale of the week so I bought 20 pounds of pork chops. They have the bone in them but they were a nice thick cut for $1.69 a pound. It is summer time and we are doing LOTS of traveling so I am trying to keep the food budget down.  This month alone we are traveling every weekend to dance competitions, blogging conferences, or a concert. Lots of great stuff but we need to keep the budget in line to be able to do all these things.

Verdict:

My family really liked this dish. I was a bit skeptical but they all devoured the pork chops. Even my pork hating spouse said that these were really good because the pork was well cooked but not dry and had a good taste. Win for me!

I served this with mashed potatoes and a green salad to complete the meal.

Drunken Pork Chops

  • Servings: 4-5
  • Difficulty: easy

Ingredients:

  • 2 – 3 lbs. pork chops, thick cut (if you use thinner pork chops you will need to adjust cooking times!)
  • olive oil
  • salt and black pepper
  • 1 (12 oz) bottle red ale or darker beer
  • 1/2 cup brown sugar
  • 1/3 cup ketchup
  • 1 tablespoon corn starch
  • 2 tablespoons cold water
  • Serve over rice, mashed potatoes, or noodles, if desired

Directions:

  1. Heat olive oil in a large skillet over medium heat. Add pork chops (most likely in two batches) you don’t want to over crowd the pan. Salt and pepper the pork chops. Brown each side of pork chops (they do not need to be quite cooked through) as you will be cooking them again.
  2. Mix beer, brown sugar, and ketchup in a bowl. Pour over the all the pork chops. Mix and cover. After 20 minutes simmering on low move the pork chops around so that they all get a chance to cook on the bottom of the pan. Recover and simmer for another 20 minutes.
  3. Check that the pork chops are fully cooked through.  Mix corn starch and cold water together until corn starch melts. Pour into pan and mix together. Allow to cook for 3-5 minutes until mixture thickens.
  4. Serve pork over mashed potatoes, rice, or noodles with sauce as desired.

  5. If I don’t like beer, will I these pork chops? In other words, does it have a strong beer flavor?

      Maybe? It doesn’t have a strong beer flavor but it does have a bit of tang from the beer. My daughter hates the smell of alcohol in general but she liked these. You can add chicken stock instead or apple juice if you like. It changes the flavor a bit but still gives you juicy pork chops.
