Guest Post: Blackberry-Cherry Cobbler

I haven’t had a chance to try this delicious looking cobbler but I cannot wait. Blackberries and cherries are popping up everywhere right now. How fun would it be to go out berry picking and then making a delicious dessert with your berries?

 Hello everyone! My name is Hazel aka Mumma Alsum. Marci has graciously allowed me to write a guest post here on What’s for Dinner Moms?.

Tonight’s dessert is going to be a fruit cobbler. There is a distinct twist on this dessert whereby we will be using ginger and lime to bring out different layers of flavor in the pie. This cobbler can be made with locally sourced or gathered ingredients in Michigan (or Washington 😉 ).

Verdict:

We really enjoyed this dessert. It had a great variety of flavors and textures, and they were in good balance: zesty, tart, sweet, sticky, crunchy. My husband said he would have liked more crust so maybe keep that in mind. I don’t like when the topping on cobbler gets soggy so I was happy that this one was crisp on the outside and almost fluffy on the inside – like a country biscuit. My kids absolutely loved it, and could have eaten even more than we ended up letting them. Also, we wished we had cream, Cool Whip, or ice cream to go with it.

 

Blackberry-Cherry Cobbler

  • Servings: 6
  • Difficulty: easy

Ingredients:

Filling:

  • 1 pound fresh local cherries, pitted
  • 1/2 pound fresh wild blackberries
  • 1/4 cup sugar
  • 1 1/2 tablespoons oat flour
  • 1 tablespoons ginger ale (Vernors if you’re in Michigan… Obviously.)
  • 1 teaspoon lime juice
  • 1/2 teaspoon fresh grated ginger
Topping:
  • 1 cup oat flour
  • 1 teaspoons baking powder
  • 1/2 tablespoon sugar
  • 1/4 cup salted butter, melted
  • 1/4 cup ginger ale

Directions:

  1. Preheat oven to 350f degrees.
  2. Combine all ingredients for filling in a pan and cook on the stovetop for ten minutes stirring occasionally to prevent burning.
  3. Combine all topping ingredients in a mixing bowl and stir until a sticky dough is formed.
  4. Fill a pie dish with the filling and spread out the topping over it.
  5. Bake for 15 minutes, or until crust is crisp.
