Did you get to watch the eclipse yesterday? Live? On the internet? We made viewing boxes but even though it was sunny when I took this picture there were only a few minutes when the sky was not fully overcast. We were able to catch a quick glimpse when it was at full eclipse but other than that – nothing. It was fun sitting outside as a family and making the viewer.
We are closing in on the end of the month! We bought some pork chops and chicken that were on sale this week to get us though the next eight days. Our CSA share had some fresh corn, onions, peppers, squash, and cucumbers in it so that really helps get us through.
A simple fried pork chop with sour cream gravy is super simple to make and the whole meal took less than 30 minutes from start to finish!
Verdict:
At first my children were skeptical about the sour cream gravy. It has a mellower flavor with a bit of a tang (from the sour cream). My children at first said it needed garlic or pepper but the more they ate it the more they liked it just as it was.
We LOVE Morton Nature’s Seasoning Blend. I use it on everything from fries to meats. I know I can make my own but it is so handy to just have the jar to sprinkle on everything that needs a hint of flavor.

Sounds yummy. Sometimes I cook chicken enchiladas in a sour cream sauce and I think I do it more for the sauce than the enchiladas.
