Simple Comfort Food – Easy Poutine

Some days you just want comfort food. Poutine (click for link to original recipe) is comfort food. French fries drenched with gravy and melty cheese curds. If you make it the correct way you cut the potatoes, fry them up, make your gravy and then when the gravy is hot pour it over the warm fries and cheese curd. Some days you just don’t have time for all that or the energy.

Easy Poutine can be a filler for those days. Though fresh is still the best this works. The fresher the cheese curd the squeakier it is. Delicious!

Verdict:

Though it is not the “real” thing this was delicious! It was a rainy day and this was the perfect comfort meal for lunch. Both kids were looking for more.  I added a hearty side salad to make myself feel better about serving this for lunch.

If you don’t have cheese curds or cannot find it any slightly softer cheese such as Colby, Monterey Jack, or even a mild cheddar would work in this dish.
