Mexican Doritos Casserole

When I read this recipe I thought I couldn’t do it. It had canned cream of chicken soup in it. I usually do not make anything with canned cream of “something” soups. I either make my own version or substitute another ingredient. But, as it nears the holidays I am less inclined to fuss and one can of cream of chicken soup never hurt anyone. Well, lets hope not.

Verdict:

My kids love Doritos. I think they are fairly disgusting and give me a stomach ache when ever I try to eat them. My kids know it is a treat if a bag of Doritos finds its way into my grocery cart. They loved this. Even though they both said they could do with out the beans in the casserole I only used 1/2 a can and they both ate two servings!

This was better than I thought it would be. It was a bit too spicy for my daughter so she topped it with a dollop of sour cream to cut the heat and was perfectly happy. Her spice tolerance is near zero.

Serve this with a nice hearty green salad for a complete meal.

Tip: If you only use half the tomato and bean mixture save it for another night and make a pan of quick nachos with the mixture. No waste.

Ingredients:

  • 1 1/2 – 2 lbs. ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons cumin
  • 1 tablespoon (plus or minus) chili powder
  • 1 cup salsa (hot or mild – your choice)
  • 1 cup sour cream
  • 1 (10.5 oz) can cream of chicken soup
  • salt and black pepper
  • 1 (16 oz) Bush’s chili beans (mild or spicy – your choice)
  • 1 (10 oz) can diced  tomatoes and green chilies
  • 2 (8 oz – 2 cup) bags shredded  Mexican cheese
  • 1 (10.5 oz) bag Doritos
  • 8 large tortillas, cut in quarters for serving, if desired
  • extra sour cream, salsa, taco sauce, guacamole, for serving if desired

Directions:

  1. Preheat oven to 350 degrees. Spray a 13 x 9 casserole dish with non-stick spray.
  2. Cook ground beef, breaking into small pieces, in a large skillet until almost cooked through. Drain grease from pan. Add onion and garlic to pan. Cook until ground beef is cooked through and onions are translucent.
  3. Add salsa, cumin, chili powder, salt, and black pepper to ground beef. Stir well and cook for about 5 minutes to cook off some of the liquid. Taste and adjust spices as necessary.
  4. Remove from heat and add sour cream, cream of chicken soup, and 1 cup cheese (about 1/2 a bag) into ground beef mixture. Mix and taste. Adjust spices.
  5. In a bowl mix chili beans, drained, and tomatoes, drained.
  6. Crush a couple handfuls of Doritos in the bottom of the casserole dish. Spread to cover bottom of dish.
  7. Spread 1/2 of the beef mixture over the Doritos.
  8. Spread 1/4 of the bean mixture over the meat. You can use half the mixture but it is more beans and a bit liquidy – up to you and your families tastes.
  9. Add a cup of cheese sprinkled over the top. Then add another layer of crushed Doritos over the cheese.
  10. Add another 1/4 of the bean mixture spread over the Doritos.
  11. Finally spread the remaining meat mixture over the top.
  12. Top with a cup of cheese. Spray a piece of aluminum foil with non-stick spray before covering casserole.
  13. Bake covered for 20 minutes. Then uncover and bake an additional 10-15 minutes until the casserole is browning and bubbly.
  14. Remove from oven and allow to rest for 5 minutes before serving. Serve with tortillas if desired.

    This is sort of like the Frito Pie my sister makes. I’m not sure why the “cream of” soup was needed. Glad your kids liked it.
