We are stuck on chicken right now. Chicken breasts were only $1.59 a pound in bulk at our local grocery store so we have 30 lbs. of chicken in the freezer! Lots of chicken dishes will be appearing this month. We are just finishing up a No Buy January when we clean our cupboards and freezer so when I buy the inexpensive chicken breasts on sale they don’t go into the bottom of the freezer to never appear again.
We bought some fresh broccoli and some powdered Ginger to end out our month but overall we have done really well. Anything that is left is pulled to the refrigerator to use in the next two days or goes into the trash (except for the turkey, that we keep).
Verdict:
Holy dishes, Batman! I swear this recipe dirtied every pan, bowl, and spoon in my house! It was delicious but the dishes! So, for that reason alone I made this a moderately difficult recipe.
The flavor was good but I added a bit of garlic and ginger in the end for our tastes. Also if you like your food really saucy I would use 1 1/2 times the sauce but if you like a moderate amount of sauce the measurements are good.
Ingredients:
- 1 1/2 – 2 lbs. chicken breasts, cut into cubes
- 6 tablespoons soy sauce
- 2 teaspoons sesame oil
- 4 tablespoons flour
- 2 tablespoons water
Sauce:
- 3 tablespoons sesame oil
- 1/2 teaspoon powdered ginger
- 1 cloves garlic, finely minced
- 2 cups chicken stock
- 1/4 cup cornstarch
- 1 1/2 tablespoons rice wine vinegar
- 1/4 cup sugar
- 2 tablespoons soy sauce
For Serving:
- 16 oz pasta, boiled to al dente
- 2 large bunches of broccoli
- crunchy noodles, sesame seeds, or other toppings as desired
Directions:
- In a bowl mix chicken, soy sauce, sesame oil, flour, and water until well blended. Set aside.
- Bring water to a boil for the pasta. Cook according to package directions.
- While the pasta water is coming to a boil steam the broccoli to just before it is done to your liking to make it a bit soft otherwise it may not be cooked enough when you add it to the chicken and the sauce.
- Begin making the sauce by placing the sesame oil, ginger, and garlic in another saucepan over low heat. Stir occasionally and let cook for 2-3 minutes until it is well fragrant. While the garlic is cooking in a bowl mix remaining sauce ingredients. Stir the ingredients together until the cornstarch starts to dissolve. Pour the bowl mixture into the sauce pan slowly and stir until sauce thickens. Keep sauce warm over very low heat.
- In a fry pan pour the chicken and stir fry 3-4 minutes per side until all pieces are cooked through. Add broccoli, pasta and sauce to pan and stir together. Serve hot.
