We are a house divided, on French Toast that is. Two really like it and the other two are, meh, we will eat it if we have to. I know a large part of why we don’t like it is that I tend to use substandard bread to make the French toast. You need a good Challah Bread or thick bread to make the best French Toast but when I go to make it I usually only have store white bread to use. Makes it a soggy, limp piece of French Toast
Verdict:
This was actually a fun twist on French Toast. The pancakes actually held up well to the eggy batter and the bit of cinnamon, vanilla, and sugar made them much more flavorful than plain pancakes. All four of agreed we would make this again and again.
Ingredients:
- 1 1/2 cups flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg, slightly beaten
- 1 1/2 cup buttermilk
- 3 tablespoons oil
For French Toast:
- 4 eggs, beaten
- 1 cup milk
- 2 tablespoons sugar
- 2 teaspoons vanilla
- 1/2 teaspoon ground cinnamon
For Serving: (as desired)
- Butter
- Maple Syrup
- Powdered Sugar
Directions:
- In a large bowl stir together flour, sugar, baking powder, baking soda, and salt. In a second bowl beat egg, buttermilk, and oil together.
- Add egg mixture to large bowl and stir until just moistened.
- On a hot, greased griddle make pancakes using approximately 1/4 cup of batter. Cook for 2-3 minutes on each side until golden brown and are cooked through. Remove pancakes to a plate to cool.
- Once all pancakes are cooked and cooled mix together all ingredients for French Toast in a large bowl until well blended. Dip each pancake into the egg mixture letting excess drip back into the bowl.
- Cook on your greased griddle until egg mixture is browned on each side, 2-3 minutes per side.
- Serve hot with butter, syrup, or powdered sugar.

Yummmm…I love French toast and pancakes..this takes the cake. I need it gluten free..I made buckwheat protein pancakes tonight and extra for left over..im going to french toast them in the morning..

I’m a “meh” person when it comes to French toast. I think that’s the reason why I don’t like it. I’ll keep that tip in mind regarding what type of bread to use.
