Korean Beef Tacos with Pickled Onions and Cucumbers

If you have read my blog over the past year or two you may have noticed my family really likes combinations of Asian spices with touches of something different. Still trying to keep those food costs down one of our favorite meats to go to is ground beef. But, we can only eat so much pasta and sauce or hamburgers before my family revolts. These Korean Beef Tacos with Balsamic Pickled Onions and Cucumbers was so delicious we didn’t need to add anything else to the tacos.

Verdict:

We loved these tacos so much! The family has asked me to make them again very soon. I will probably oblige because they are so simple to make. I sliced the onions and made them first early in the day. Then while they were cooling down I cleaned and sliced the cucumbers to add to the dish. I covered them and let them sit in the refrigerator most of the day to soak up all the vinegar. The tacos themselves only take about 20 minutes to make. Add a salad and dinner is ready in less than 30 minutes!

Korean Beef Tacos with Pickled Onions and Cucumbers

A ground beef recipe with tons of flavor and so easy to make.

Ingredients:

Ground Beef:

  • 2 lbs. ground beef
  • 3 cloves garlic, minced
  • 1/2 tsp ground ginger (or to taste)
  • 1 cup soy sauce
  • 1 cup dark brown sugar
  • 4 TBSP sesame oil
  • black pepper, to taste
  • red pepper flakes, to taste

Pickled Onions and Cucumbers:

  • 1 large red onion, thinly sliced
  • 1/2 cup water
  • 1 clove garlic, minced
  • 1 1/2 teaspoons salt
  • 3 tablespoons sugar
  • 1 cup balsamic vinegar
  • 1 large cucumber, peeled and thinly sliced

Flour tortillas, for serving

Directions:

  1. Place onions in a large glass bowl.
  2. In a small saucepan combine the garlic, vinegar, sugar, water, and salt over medium heat. Stir until the sugar and salt have dissolved. Cool slightly then pour the liquid over the onions – enough to cover them fully.
  3. While mixture is cooling completely peel and slice cucumbers. Place cucumbers in vinegar mixture. Stir well until all are completely covered. Seal cover with plastic wrap and refrigerate at least a few hours to overnight.
  4. Add 2 tablespoons of sesame oil to a large skillet over medium heat.  Brown ground beef in the sesame oil.  Break the ground beef up into small pieces with the side of the spoon as it browns.
  5. Drain off excess fat from the pan and add garlic to the pan with the meat.  Cook one to two minutes until garlic is fragrant.
  6. Add 2 tablespoons sesame oil, ginger, soy sauce, brown sugar, black pepper and red pepper to pan.  Taste and adjust levels of ginger, red pepper flakes and black pepper to your liking.
  7. Heat through and serve over warmed tortillas. Top with pickled onions and cucumbers to serve.

    Yes, looks like it is really cooked quickly but at the same time, it seems very special.
    On a different note, I noticed that I cannot print the recipes anymore. Only the bar with “Time”, “Difficulty”,… shows up.

        I just checked but it is still the same. I noticed that when you look at your post only the “Serving”, “Time”,… line is inside the print box. Before, there was the whole recipe inside that print box. Perhaps that helps.

            I copy and past from an older post. I open a second window and bring up an edit of a recipe. I copy and paste to the new recipe. Then I make the title changes and other changes for the new recipe. I can’t remember from one time to the next. So copy and paste is my friend.
