Simple Dirty Rice

Now this isn’t the typical dirty rice that you think of when you think of dirty rice. My family is NOT a fan of Cajun spices so I made it in a way we would like. Do the same for your family. If they like Cajun spices add some to the dish if not what do they like? Flavor it to suit your family.

As you can see I served Italian sausage two nights in a row but you know what? My family never even noticed! The meals are so different that no one said anything about having the same meat two nights in a row.

Verdict:

This was actually really easy and tasty! This recipe can be made spicy with hot sausage and Cajun spices or savory with mild sausage and sage. It is up to you what your family will prefer.

My family likes the savory but every so often they like the spicy too. I served this with a green salad to complete the meal.

Simple Dirty Rice

  • Servings: 6-8

A skillet meal that you can make savory or spicy to suit your family.

Ingredients:

  • 2 lbs. Italian Sausage, bulk or casings removed (your choice hot or mild)
  • 2 cloves garlic, finely minced
  • 1 onion, small dice
  • 1 red pepper, small dice
  • 2 stalks celery, thin slice
  • 2 cups long grain white rice, uncooked
  • 4 cups chicken broth
  • 1 teaspoon sage OR 2 tablespoons Cajun spices (choose one – savory or spicy)
  • salt and black pepper, to taste

Directions:

  1. In a large skillet, cook sausage breaking it into small pieces as it cooks. Add onion, garlic, pepper, and celery to the pan five minutes after beginning the sausage.
  2. Cook until meat is no longer pink and vegetables are soft. Drain fat.
  3. Add seasoning – sage or Cajun spices, rice, chicken broth to the skillet. Bring to a boil.
  4. Reduce heat and simmer for 20 to 25 minutes, until rice is tender. Fluff with a fork and serve.
