Christmas Cookies Week 1 (2019): Chocolate Crinkles


I have decided rather than just limit cookies to the two months prior to Christmas I am going to try to do one cookie, cake, or candy treat a week for a while. I would like to keep it going through Christmas 2019 but we shall see how this goes. I love sweets but am not a baker so this may be tough for me.

I have to admit that these are usually not my favorite cookies. My daughter has made them a few times with different cake mixes for different flavors. They are okay but I often think they are rather blah. So, when they made these for a choir dinner I didn’t even bother to try one until my daughter said I had to because they were so good. I didn’t want to hurt her feelings so of course I tried one. She was right! These were made without a cake mix and were delicious!

Verdict:

Mini chocolate chips and cocoa make these cookies deliciously chocolatey. I always found the cake mix recipes for these cookies to be lacking flavor but these were wonderful! They had a nice chocolate flavor and had a slightly chewy outside and melting inside.

Chocolate Crinkles

A melt in your mouth chocolate cookie delicious enough to share.

Ingredients:

  • 1 1/2 cups butter softened
  • 1 1/2 cups sugar
  • 1/2 cup dark brown sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 cup cocoa powder
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1 cup mini chocolate chips
  • 2 cups powdered sugar, for rolling

Ingredients:

  1. Beat together butter and sugar in a large mixing bowl until light and fluffy.
  2. Add eggs, one at a time, beating in between each bag until fully incorporated. Stir in vanilla extract.
  3. In a separate, medium-sized bowl, whisk together the flour, cocoa, baking powder, and salt.
  4. Gradually add dry ingredients by cup increments beating well in-between additions.
  5. Stir in mini chocolate chips.
  6. Cover bowl with plastic wrap and refrigerate at least 4 hours or for overnight.
  7. Preheat oven to 350 degrees after dough has rested.
  8. Roll dough into 1 1/2 tablespoon-sized balls with your hands and roll thoroughly in powdered sugar.
  9. Transfer to baking sheet and bake for 10-12 minutes.  Cookies will be brown but do not let bottoms burn!
  10. Allow cookies to cool completely on racks.
