Buffalo Chicken Tacos with Blue Cheese

We have been having several “health” scares in my family lately. My mother’s eyes have suddenly swollen and dilated. She is having an MRI tomorrow to see what is going on. My partner is having some tests next week. We are keeping our fingers crossed and it will probably be fine but it makes it clearer that we need to get our wills updated, look at our long-range planning financially (she is the main support for our family), and updating our guardianship for our children. Things you don’t want to or always think about but really are needed.

Dinners are simple and need to be able to be spread across a couple of hours so my slow cooker is perfect for this.  Buffalo Chicken is a favorite for us so these Buffalo Chicken Slow Cooker Tacos are perfect for busy family nights.

Verdict:

I layered pre-shredded cabbage mix (for cole slaw) with the tacos to give them a bit of crunch and texture. I was worried the kids wouldn’t like it but the Buffalo sauce added so much flavor they liked the texture and didn’t notice much of the cabbage flavor. That is a Mom win in my mind. Get some good stuff in my kids without them making “The Face?” Perfect.

Buffalo Chicken Slow Cooker Tacos

  • Servings: 8-10

A taco with tons of flavor and a bit of crunch from the shredded cabbage.

Ingredients:

  • 2 lbs. chicken breast
  • 1/2 cup water
  • 1/2 cup butter, melted
  • 1 cup + Hot Sauce, your favorite (I used Frank’s)
  • 1 1/2 teaspoons garlic powder
  • salt and black pepper, to taste
  • pre-shredded cole slaw mix
  • blue cheese, crumbled
  • creamy blue cheese dressing, to taste
  • tortillas, for serving

Directions:

  1. Salt and pepper chicken. Place in the bottom of slow cooker with 1/2 cup water. Cook on low for 6-8 hours or on high 4-5 hours.
  2. Once chicken is cooked through remove the chicken from the slow cooker and dump the liquid from the bowl of the slow cooker. Be careful it is hot!
  3. Shred or cut chicken into small pieces and return to slow cooker. Add butter, hot sauce, and garlic to chicken. Stir well. Taste and adjust spices to your liking.  Add cayenne pepper or paprika if you like to add a bit more kick!
  4. Let chicken and sauce reheat for about 30 minutes before serving.
  5. Warm a tortilla in the oven according to package directions. Serve over shredded cabbage and top with blue cheese and a drizzle of blue cheese dressing, if desired.

  9. I forgot to tell you that we made these after you posted last week. We are doing low carb, so we ate them in lettuce wraps instead of tortillas.
