Steak and Bleu Cheese Tostadas

We are coming off our 9th Snow Day this school year. After this I think the kids need to start making up days. We got three extra days from the state because of the State of Emergency a few weeks ago for cold weather but we are still running low. This never happens. Things around the house are discombobulated, as my grandmother would say. The dishwasher, washing machine, and refrigerator seem to be constantly running. I am trying to keep meals simple to cut down on the time we are in the kitchen.

This meal certainly fits the bill. The hardest part is waiting for the onions to caramelize and steak to cook. The tostadas, which basically means toasted, usually refers to the tortilla which is most often served flat or in a bowl shape. The shells for this dish get a quick fry in a fry pan to crisp up and a short bake in the oven to warm up.

Verdict:

These are a family favorite. I used a cheaper cut of meat that I marinated in our favorite vinegar based marinade. We cooked the steak to slightly less than medium rare (we knew we were going to put it in the oven for a few minutes and didn’t want it over done), with the onions and bleu cheese. A little drizzle of bleu cheese over the top finished it off perfectly. It was so delicious!

We served this with a spinach side salad to complete the meal.

Steak and Bleu Cheese Tostadas

  • Servings: 9-12

A simple meal with lots of flavor.

Ingredients:

  • 1 1/2 lbs. steak, cooked to your favorite doneness, thinly sliced
  • 2 large sweet onions, thinly sliced
  • 2 tablespoons butter
  • salt and black pepper
  • crumbled bleu cheese
  • bleu cheese dressing (if desired)
  • 10-12 6″ corn tortillas
  • vegetable oil

Directions:

  1. Add butter, a pinch of salt, and thinly sliced onions to a skillet over medium-low heat. Stirring occasionally until onions are well browned. This process will take 20-30 minutes. Do not rush them if they are cooking too fast turn the heat down. Once they are done remove from heat.
  2. Preheat oven to 350 degrees. You will need a rimmed baking sheet, set aside.
  3. In small skillet heat a splash of vegetable oil over medium heat. Once warmed add corn tortilla. Cook for 2-3 minutes per side until slightly crispy.
  4. Remove tortilla from pan to baking sheet. Top with some steak, caramelized onions, and a sprinkle of bleu cheese. Repeat until steak and tortillas are gone.
  5. Bake for 5-10 minutes until bleu cheese is melted and steak is warmed.
  6. Remove pan from oven and serve warm with a drizzle of blue cheese if desired.

  1. No stay for us, but today is our “mid-winter” break. Though we have 6 inches of snow, so I am sure that we would’ve had a snow day otherwise. Stay safe 🙂

      We were at 38 degrees yesterday and everyone was outside in sweatshirts soaking in the sunshine. It has been so dreary.
