Shrimp Tacos with Coleslaw

Slowly we are coming to the end of the school year. I just finished tax season last week and needed time to pull my life back together. We are almost to the bottom of the laundry and dishes! Yeah!

Closer and closer we edge towards summer and grilling out. This dish would be amazing with grilled shrimp. This dish was a super easy weeknight meal. You can use frozen shrimp, thawed to save time. Make the coleslaw as the shrimp are cooking if you like it with a bit of crunch as we do. If not you can make the coleslaw even the night before.

Verdict:

This meal was done in about 30 minutes beginning to end. You can use flour or corn tortillas, your choice. Add toppings as you wish. I like mine with LOTS of shrimp and some coleslaw. To make the coleslaw even zestier add a bit of chili powder and Cayenne powder to your coleslaw recipe to make it a bit spicier.

Serve this with a green side salad if you like.

Shrimp Tacos with Cole Slaw

Shrimp Tacos with Cole Slaw is an easy mid-week meal.

Ingredients:

  • 2 lbs. shrimp (deveined and detailed, thawed if frozen), patted dry
  • 2 tablespoons olive oil
  • 2 teaspoon paprika
  • 2 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper optional
  • 1/2 teaspoon kosher salt
  • Shredded cabbage for coleslaw plus mix or your own favorite recipe
  • 8-10 medium tortillas

Directions:

  1. In a large bowl mix shrimp, 1 tablespoon olive oil, paprika, cumin, onion powder, black pepper, and salt in a bowl until well coated. Set aside.
  2. Make your coleslaw and wrap flour tortillas to warm in oven or fry corn tortillas and keep warm in oven.
  3. Add additional tablespoon of olive oil to a large skillet. Over medium high heat cook the shrimp 4-6 minutes until they are just cooked through stirring well the entire time.
  4. Remove shrimp from heat. Serve on tortillas, over coleslaw with topping of choice.
