Barbecue Mashed Potatoes

Have you ever just forgotten to post something? I could have sworn I was all done Sunday night and had everything ready to go. Then when I checked my page yesterday there was nothing new. What??? Totally forgot to hit publish to schedule the post. Oops. Well, here is the post now.

We are still grilling out 3-4 nights a week and I am always looking for new sides to serve with our meals. You can only eat so much brown beans, potato salad, and macaroni salad until you become sick of them. We were having grilled Italian sausages for dinner and I was looking through the pantry for something “different” to make.

I had a couple packets of instant mashed potatoes in the pantry and was remembering the Barbecue Spare Rib Casserole (click for link to recipe) I made 2 1/2 years ago that my family loved. I didn’t have spare ribs but thought I could make a variation on it for a side dish, Barbecue Mashed Potatoes!

Verdict:

Once again my family thought I was loosing my mind when I told them what I was making. But, they went with it (as always). Once they tasted it they were converts! This was delicious and simple. I was going to layer the barbecue sauce under the cheese (which if you want you can totally do) but decided I better drizzle it over the top in case they hated it. Nope, it was yummy and the diced red onions added just a bit of crunch and extra flavor to the dish. This will be a new side on repeat for us.

Barbecue Mashed Potatoes

Ramping up a simple instant mashed potato side dish!

Ingredients:

  • 2 (4 oz) packages of instant mashed potatoes (I prefer the Idahoan Butter flavored but use what you prefer)
  • 4 oz. sharp cheddar cheese, shredded
  • red onion, diced
  • barbecue sauce (your favorite for drizzling or layering – it is up to you)

Directions:

  1.  Preheat oven to 350 degrees. Prepare an 8 x 8 baking dish, or a 9 x 9 baking dish with non-stick spray. Set aside casserole dish.
  2. Prepare instant mashed potatoes according to package directions. Once potatoes are stiff spread them into the bottom of the casserole dish.
  3. You can either spread the barbecue sauce over the potatoes at this point OR save it to drizzle over the top it is up to you. I like the warmed barbecue sauce but some may prefer it on top.
  4. Top potatoes or barbecue sauce with cheese.
  5. Bake for 15-20 minutes until cheese has melted and become slightly browned and bubbly. Remove pan from oven and allow to rest for 3-4 minutes before serving.
  6. Serve with onions and extra barbecue sauce if desired.

    BBQ is great with potatoes when you want it, or any tomato product. I often add some to mine, whether ketchup, tomato sauce, BBQ. Really great photo, too!
