One of the skills I continually work with my kids on is cooking. Last night when I asked my son to put the pork loin in to cook I got a bit of the eye-roll. Not completely because I cut that one off quick. But, when I told him what he had to do to make dinner he did not believe me!
Verdict:
Overall we are not huge pork fans but when it is on sale for “Buy One, Get One Free” and it is only $1.89 a pound? You better believe I picked up 4 pork loins! I cut two into steaks and cut two into 3rds to make 3 lb. pork loins.
This recipe has to be the EASIEST recipe to make for dinner AND it produces a super juicy roast. Baking at 275 for 2-3 hours slow roasts it and use your thermometer to cook it to the exact right temperature and it will not be dry at all. Inserted into the center is should be 145 degrees after resting for 5 minutes. If you remove it from the oven about 138-140 it should be perfect.
Everyone kept commenting at dinner how great this pork loin was and you never hear that at our house. Usually one or two like it and the rest are okay with it. Everyone wanted some of the leftovers for lunch! A hit!
I served this with angel hair pasta with butter, garlic, Parmesan cheese, and black cracked pepper and a side of green beans.
