Buffalo Chicken Dip

Some nights we have an appetizer dinner. Little bites can be fun and a super simple dinner if you make things “semi-homemade.” This dip can be made with slow cooker chicken, or leftover chicken, or a shredded rotisserie chicken from the grocery store on a busy day. No matter the chicken you use it is super easy.

Verdict:

My family liked that they could individualize the toppings on this. I made this dip very simple so that everyone would be happy. My daughter hates onions so I chopped onions to put on top of mine and she could have hers with no onions. I don’t like blue cheese so the rest of my family put blue cheese on theirs and I didn’t have to. We also had creamy blue cheese, ranch dressing, green onions, Siracha sauce (for my son) and some Cayenne powder for him too.

This recipe would be great for dinner, a party, or a gathering of teens.

Buffalo Chicken Dip

A spicy appetizer that your guests can customize to exactly how they like it.

Ingredients:

  • 1 – 1 1/2 lbs chicken, shredded or finely chopped
  • 1 (8 oz) brick cream cheese, cut into small pieces and softened
  • 1/2 + cups Frank’s Hot Sauce
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • salt and black pepper, to taste
  • 1 1/2 cups (about 6 oz) sharp cheddar cheese
  • toppings, as desired: chopped onions, green onions, ranch dressing, blue cheese, blue cheese dressing, extra hot sauce, siracha or Cayenne pepper, etc…
  • Items for serving: tortilla chips, baguette, celery, carrots, etc…

Directions:

  1. Preheat oven to 375 degrees. Spray a casserole dish with non-stick spray.
  2. In a bowl mix together chicken, cream cheese, hot sauce, butter, garlic powder, salt, and black pepper until well blended. Taste and adjust spices as desired.
  3. Spread dip into the casserole dish. Top with cheddar cheese.
  4. Bake for 20-30 minutes until dish has heated through and cheese is bubbly.
  5. Remove from oven and serve with toppings and dipping items.
