Hamburgers with Goat Cheese, and Caramelized Onions with Balsamic Vinegar Reduction

Are you like us trying to eek out the last few weeks of being able to grill? We are having some extra cool nights and I know there are people that grill year round in Michigan but we are not them. We usual stop around the beginning of  October when it is too cold to stand outside while the grill is on. It is no longer fun to grill when you are freezing!

This burger is super simple and made with things we have on hand. Yes, my family loves dairy so we always have just about 20 lbs of cheese in our house at any one time. Goat cheese, sharp cheddar cheese, feta, Swiss, and blue cheese are among the favorites.

Verdict:

This burger was super packed with flavor and texture. The creamy goat cheese, the savory onions, and the tang of the balsamic reduction are amazing together! Both kids devoured two burgers. I could barely eat one it was so filling with a nice toasted pretzel roll.

We added a side of brown beans and a simple green salad to complete the meal.

Goat Cheese, Caramelized Onions, and Balsamic Reduction Burgers

A flavorful burger that is perfect for fall.

Ingredients:

  • 1 1/2 – 2 lbs. ground beef
  • salt and black pepper
  • goat cheese, sliced
  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 cup balsamic vinegar
  • splash of honey

Directions:

  1. Form the ground beef into 6-8 patties that are thinner in the center than at the edges. Salt and pepper burgers well. Set aside.
  2. In a skillet melt butter over medium low heat and add onions once butter has melted. You will want to cook the onions, stirring occasionally, for 30 minutes or so until they start to turn golden brown. You do not want them to cook too quickly or they will not get that nice sweet flavor.
  3. In a small saucepan over medium low heat allow the balsamic and honey to reduce to less than 1/2 the volume. It will get thick and syrupy as it cooks down. When it coats the back of the spoon and runs like syrup it is done.
  4. Preheat grill and cook burgers until desired doneness is reached. Removed burgers from the grill. Butter the pretzel rolls on the inside and grill cut sides down for a minute or two to brown.
  5. Prepare hamburgers by placing on a roll with caramelized onions on top, then goat cheese, then a drizzle of balsamic reduction. Add the top of the roll and serve warm.
