Mashed Potato Casserole with Crispy Chicken

I have had the crud that is going around here for the past week or so. It started with a cold like thing and then went into this horrible cough and chest cold thing. Ick! So I have been super tired from the coughing all the time. I don’t want to cook and I need comfort food. Yes, need.

This is a great way to use up leftover mashed potatoes, vegetables (substitute green beans or peas for the corn) and gravy (turkey gravy on Thanksgiving or beef on Christmas are delicious!). This is like a simplified version of KFC’s Chicken Bowls. It is best made from homemade leftovers but packaged versions of mashed potatoes and gravy will work.

We were out of chicken strips the other night. I try to keep one bag on hand in the freezer for quick meal substitutes or snacks if needed but realized we had chicken patties. Remember make it work!

Verdict:

My kids loved this. It was super simple to make and the kids could do it all on their own. We had leftover mashed potatoes but instant mashed potatoes work well too. Everything else are things we have on hand in our pantry for nights like this. It tasted like a warm hug!

I served this with a green side salad to complete the meal.

Mashed Potato Casserole with Crispy Chicken

A great use for leftover mashed potatoes that tastes like a warm hug.

Ingredients:

  • 5-6 cups mashed potatoes, prepared package or homemade leftovers both work well
  • 1 (15 oz) can corned corn, drained
  • 4 oz. sharp cheddar cheese, shredded
  • Crispy Chicken Strips,
  • 2 (.87 oz) packages brown gravy or 1 1/2 cups leftover gravy

Directions:

  1. Preheat the oven to 400 degrees.
  2. Take out your chicken strips and let them sit at room temp for about 5 minutes to let the chicken strips soften a bit to slice.
  3. Spread the potatoes on the bottom of a 13 x 9 casserole dish. If your mashed potatoes are cold, warm them first.
  4. Top with corn and cheese.
  5. Carefully slice the chicken strips into pieces and top the casserole dish with them.
  6. Bake for 15-25 minutes or until warmed through.
  7. Prepare the gravy on the stove top according to package instructions while the casserole finishes baking.
  8. Drizzle your desired amount of gravy over the casserole dish. Serve hot.
