Simple Applesauce Cake with Caramel Frosting

First off this is a horrible picture of a delicious cake. All the pictures I took of this cake were weird. I don’t know if my phone didn’t like all the brown colors or what but they were all blurry or weird colored. Anyway, if you can get past that this is a delicious cake and frosting. It is SUPER rich and you can only eat a small piece.

I have been making this cake for close to 25 years now. My kids think the frosting is amazing it has a rich buttery caramel taste that also goes well with spice cakes, chocolate cakes and even white cakes. So if you don’t want to make the cake (which is unbelievably easy) at least try the frosting on a boxed cake to make it special.

Ingredients:

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 3/4 cup flour
  • 2 1/2 teaspoons baking powder
  • 1 cup applesauce
  • 3/4 teaspoon ground cloves
  • 1 1/4 teaspoons cinnamon

Caramel Frosting:

  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 2 tablespoons milk
  • 1 1/2 cups powdered sugar

Directions: 

  1. Preheat oven to 350 degrees. Spray an 8×8 pan with non-stick spray.
  2. Cream butter and brown sugar together.
  3. Stir applesauce into butter and brown sugar.
  4. Beat in flour, baking powder, cloves, and cinnamon until light and fluffy.
  5. Pour batter into pan and bake for 30-35 minutes until fully cooked through.
  6. While cake is cooling make frosting by melting butter in a saucepan over medium heat. Add brown sugar to the pan and bring to a boil. Stir at a boil for about a minute or until it thickens. Remove from heat and allow to cool slightly.
  7. Add milk and beat to smooth texture.
  8. Add sugar beating until creamy and spreadable. Taste and adjust flavoring as needed.
  9. Spread frosting on cooled cake and serve.

    Yummy, I’ve bookmarked that. This would be good for the apples from our tree; cooking apples that need to be well chopped up as they have either fallen on the ground or have little worms in!
