Apple Pancakes

As we get closer to Thanksgiving I am trying to keep dinner easy and lighter. These pancakes are simple and let me keep planning and cleaning for the holidays. We will be gone over Thanksgiving. My daughter is dancing in Oireachtas (o-ROCK-tus) Irish dance regionals in Kentucky so we will be traveling on Thanksgiving day. We will enjoy hearty appetizers on Thanksgiving night and hopefully be able to watch a Christmas movie or two. We will have our full Thanksgiving dinner in December (or January).

We topped these with canned apple pie mix but you could easily make your own with diced apples, cinnamon, sugar, and a pinch or nutmeg.

I tried to cut my pancakes so you could see the apple pieces inside but as usual I was photographing my plate as we were sitting down to eat and it is hard to see all the little apple pieces.

Verdict:

I like that these pancakes are not overly sweet. I added a bit of butter over mine when I ate them but needed no syrup. My kids both used syrup in addition to the apples.

I served this with a side of bacon to complete the meal.

Ingredients:

  • 3 cups flour
  • 1/3 cup brown sugar
  • 1 tablespoon baking powder
  • 2 tablespoons cinnamon
  • 1 1/2 teaspoons nutmeg
  • 1 1/2 teaspoons ground cloves
  • 1/2 teaspoon salt
  • 3 cups whole milk or half and half
  • 3 large eggs, lightly beaten
  • 3 tablespoons butter, melted and slightly cooled
  • 3 teaspoons vanilla extract
  • 2 cups grated apples (use your favorites –  macs, jonagolds, and honeycrisp work well)
  • Apple pie filling, syrup, or butter for serving – as desired

Directions:

  1. If you are making these to serve all at once preheat oven to 170 degrees or keep warm on your oven.
  2. In a large bowl mix flour, brown sugar, baking powder, cinnamon, nutmeg, cloves, and salt until well blended.
  3. Create a well in the center of the dry ingredients and add to the well eggs, cooled butter, vanilla extract and apples. As you start to stir slowly pour the milk in being careful to mix until just moistened. Do not over mix or batter will not raise properly.
  4. Drop on heated griddle greased with butter in 1/3 cups. Cook until browned on each side. Place in oven to keep warm until serving.
