I love breakfast for dinner at least once a week. It makes a quick easy meal and it doesn’t leave all the good breakfast foods for just the weekend. You can easily make the casserole ingredients ahead – cook the meat, grate the cheese, etc… and assemble it just before baking.
Verdict:
This is a simple basic breakfast casserole that you can add diced peppers or onions. Serve with salsa, sour cream, or whatever you can imagine. Change the meat. Change the cheese. It is up to you!
I served this with sliced fruit to complete the meal.
Ingredients:
- 8 eggs
- 1/2 cup half and half
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 (16 oz) roll breakfast sausage, cooked and drained
- 2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella
- 1 (28-32) package frozen tater tots
Directions:

Preheat oven to 350 degrees and lightly grease a 9 x 13-inch baking pan.

In a medium bowl, whisk together eggs, half and half, salt, pepper, and garlic and onion powder.

Add the breakfast sausage to the egg mixture. Season with salt and pepper.

In a separate bowl, mix together cheddar and mozzarella cheese.

Stir 1/2 of cheese into egg mixture and pour egg mixture into baking pan. Place tater tots evenly on top or egg mixture.

Place in oven and bake for 35-40 minutes. When top of the casserole is crispy and center of casserole is firm remove the casserole from oven and sprinkle the remaining cheese over the top and return to oven. Place back in oven for 5 minutes until cheese has melted
