Air Fryer – Fried Ravioli

Day 18 – We are just waiting for the Governor to declare that the school year is over for both kids. Neither one is happy. My son has 3 Advanced Placement (AP) tests to take and I know that they were trying to come up with a plan for the students to take those so that they could still get credit for them. He has been working regularly on his AP Calculus, and his AP Writing classes. His physics? Well, not so much. We shall see what happens.  My daughter is changing schools at the end of this  year. She is to be finished with her Associates Degree and moving on. I think they are going to come up with some kind of pass/fail system for the entire state.

But, until then we wait. And eat…. Lots of eating going on here. What about your house? It seems to be all we can do other than work online, watch television, and go for little walks. My daughter is trying to go out each day and dance or jump rope but it has been so cold lately that she has been coming in coughing (which scares everyone including us) or saying her teeth hurt from sucking in the cold air. It is supposed to get a bit warmer towards the end of the week. I just want a day of sunshine again. Just one. Please.

Verdict:

So we continue on the comfort food streak. I like that these were at least not deep fried like they are when  you order them at a bar or restaurant. I have baked them before and they were good but a bit tough and chewy. I loved that in the air fryer they get crispy outside and these large round ravioli are creamy in the center.  If you can find them the large round ravioli are perfect for this.

Serve with a side of pasta sauce for dipping. These are a fun meal with a green side salad (spinach and baby arugula are particularly good) or an appetizer for a large group.

Tip: I could cook about 4-5 at a time in my xl basket (you do not want them to overlap while cooking) and kept them all warm in the oven until serving. To heat up leftovers you can warm them in your air fryer too for 1-2 minutes at 350.  Keeps them crispy.

Air Fryer - Fried Ravioli

  • Servings: 45 large ravioli
  • Difficulty: easy

Ingredients:

  • 2 (32 oz) bags of ravioli, frozen
  • 3 eggs, beaten
  • 1 1/2 cups Parmesan cheese, freshly grated
  • 3 cups Panko bread crumbs
  • 1 tablespoon dried basil
  • 1 tablespoon dried parley
  • 2 teaspoons powdered garlic
  • 2 teaspoons powdered onion

Directions:

  1. Cook ravioli according to package directions on the stovetop in water. Remove ravioli from pot and allow to cool and dry a bit.
  2. Preheat air fryer to 400 degrees and spray your air fryer basket with non stick spray.
  3. On a large flat plate combine breadcrumbs, Parmesan cheese, and bread crumbs until well combined.
  4. Whisk eggs on a plate and dredge each cooked and cooled ravioli one at a time, followed by pressing each side into the breadcrumb mixture so each one is coated. Shake excess crumbs off and place each one inside air fryer basket. Do not overlap them.
  5. Cook at 400 degrees for 3-4 minutes or until crispy on the outside.
    Serve with marinara sauce for dipping, if desired.

    It’s about to be time for yard work around here and I no longer mow my own lawn. I was cutting back the branches of my smoke bush, which about 20 plus feet tall and pulling weeds from around my a/c unit outside.

    Wish I had an air fryer right about now. Mmm.

    It has been very cold over here too the past 10 days. But at least it was mostly sunny. Hopefully warmer the further the week proceeds.
