Hamburgers with Balsamic Vegetables

Day 26 –  I am keeping track of the days on here mostly for my own sanity. Some days it seems like nothing has changed and other days it seems like nothing will ever be the same. I had an “I don’t want to day” the other day. I went to bed early and layed there reading. I had things I needed to do for work, like tax returns, but it all seemed pointless. I had a bit of a pity party for myself and now I am better. I decided it is okay to mourn the things we miss. We had friends come over the other day to pick up masks my daughter made and they stood outside the house and talked to us through the window. I miss talking to people. My son even said I miss the kids at school, even the ones I don’t like. One more month…. we hope.

Using what is available for meals is on the top of our to do list right now. We had some red pepper, a summer squash, onions, and potatoes that needed to be used within the next day or two. One of my favorite ways to cook vegetables is to roast them with a bit of balsamic vinegar and honey. We decided to top the burgers with the squash, peppers, and onions and have the potatoes as a side. Baking them all on one pan meant less clean up too!

Verdict:

This was a super hit with the whole family. They were questioning me at first about the squash and feta but once they tasted it they knew I was right. The salty with a hint of sweetness from the vinegar and honey was perfect. Plus I felt good adding another vegetable to their meals!

Tip: If you want to roast the vegetables all on one pan start with your potatoes cooking first and then add your squash, peppers, and onions after 25-30 minutes.  The smaller your potatoes are cut the faster they will cook.

Hamburgers with Balsamic Vegetables

  • Servings: 8 large burgers
  • Difficulty: easy

Ingredients:

  • 2 lbs ground beef
  • salt and pepper
  • 2 large red peppers, cut into strips
  • 1 medium summer squash, cut into thin slices
  • 1 large onion, cut into thin slices
  • 2 1/2 -3 lbs. red potatoes, cut into small bites
  • olive oil
  • 1/2 cup balsamic vinegar
  • 2-3 tablespoons honey
  • 8 hamburger rolls
  • feta cheese

Directions:

  1. Preheat oven to 400 degrees.
  2. Place potatoes on a large rimmed baking sheet. Drizzle with olive oil, salt, and pepper. Stir well to coat. Bake for 25-30 minutes until potatoes start to soften.
  3. Remove pan from oven and add squash, onions, and peppers. Drizzle with a bit of olive oil. Drizzle entire pan with balsamic vinegar and honey. Stir well. Return pan to oven and bake for 20 minutes or until potatoes are soft and onions are browning. Stir halfway through.
  4. While vegetables are baking form ground beef into 8 patties that are fairly large and about 1/2″ thick. Season well with salt and pepper.
  5. Cook hamburgers and remove to oven or tent to keep warm.
  6. Remove vegetables from oven. Serve hamburgers on a roll topped with squash, onions, peppers, and feta cheese as desired. Drizzle with extra balsamic vinegar if desired.
