Honey Cornbread

Day 46 – Today is my son’s birthday. Birthday number 2 in “Safe home. Stay safe.” I love that we don’t have to order out for the kids birthdays they want me to cook their favorite dinners.  We did order a cake from the local grocery store decorated with Star Wars for his birthday. We ordered him a few gifts online. Most of them came in but one of them is supposed to be delivered tomorrow. We had to put quite a bit of thought into the gifts as we usually try to give experiences but not knowing when things were going to open we wanted to give things this year that the kids could use. Hopefully he will like his gifts.

This Honey Cornbread paired well with the Texas Beef Chili – Slow Cooker (click for link to recipe) yesterday. I am usually not a fan of most cornbreads as I find them a bit dry but this one is my favorite.

Verdict: I love this cornbread! Warm with a bit of butter and honey drizzled over it was amazing! Everyone was eating the cornbread more than the chili. All I kept hearing through dinner was, “Is there anymore cornbread?” You know you have a hit then! I forget to make this and I need to get it back in our meals more. It is just remembering to pick up corn meal once in awhile.

Honey Cornbread

Ingredients:

  • 1 cup Cornmeal
  • 3 cups All-Purpose Flour
  • 1 cup Sugar
  • 2 tablespoons Baking Powder
  • 1 teaspoon Salt
  • 2/3 cup Vegetable or Canola Oil
  • 1/3 cup Butter, melted
  • 2 tablespoons Honey
  • 4 Eggs
  • 2 1/2 cups Milk

Directions:

  1. Preheat your oven to 350 degrees. Grease a 9″ x 13″ casserole dish.
  2. Whisk all the dry ingredients together in a large bowl until well combined. Create a well in the center.
  3. Add eggs, melted butter, oil, butter, milk, and honey to the well in the center.
    Add the wet ingredients to the dry ingredients and stir together, just until moistened.
  4. Pour mixture into the 9×13 pan and bake for 45-50 minutes.
  5. Check bread after 30 minutes. If it is browning too quickly cover with aluminum foil while it finishes baking.
  6. Cornbread is done when a knife inserted in the center comes out clean or with only crumbs. Remove pan from oven and allow to cool slightly before serving.  Serve with butter and honey as desired.
