Day 48 – Happy May! I think we have finally hit our stride in all this after almost 7 weeks. My daughter is finally beginning her dance classes, via Zoom, next week. This will bring some order to her life again. My son’s high school classes have settled into a routine after two weeks back via Google Hangouts. They have classes one hour a week, then homework, and quizzes. They get their expectations every Monday by noon from their teachers. My son is having his cello and voice lessons on Google Duo once a week. This is all becoming weirdly normal and that’s okay.
We are organizing our freezer and taking inventory of it and our pantry. We want to make sure that we are using everything before it expires or goes bad. I forgot we had several boxes of frozen cheese pierogies. When we did the inventory of the chest freezer I moved them upstairs to use because I love pierogi of any kind. Bacon? Check. Cheese? Check. Ingredients for creamy sauce? Check. We are good to go! (Yes, this is NOT a diet dish!)
Verdict: This was a split meal for us. My son, who usually doesn’t care for pierogi (it’s a texture thing), actually liked this meal. He thinks it was the extra texture added by the bacon and onions. While my daughter who likes fried pierogi did not care for the dish. It was too “mushy” for her. The adults liked all the added extra flavor of the garlic, bacon, onions, and cheese.
Serve this with a green vegetable and side salad for a meal.
