Peach Cobbler ala 1960s and 70s

Day 83 – If you grew up in the 60s or 70s you may have some vague recollection of making all different cobblers with baking mix. I know in my family they were a standard. My mother very rarely made dessert but when she did often it was a cobbler of whatever fruit was in season and a baking mix topping. My favorite was always peach or apple with the topping and melty ice cream. This memory is what made me make this for dessert.

Verdict: Some things never change. This dessert is one of the things I remember from childhood. We used canned peaches (now I would substitute fresh ones) and baking mix. My mother would never put in as much sugar as it calls for but I love it! Vanilla bean ice cream melting over a warm plate of cobbler? Yummm.

Peach Cobbler ala 1960s and 70s

Ingredients:

  • 1 cup baking mix
  • 1 cup whole milk
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup butter, melted
  • 1 teaspoon ground cinnamon
  • 1 (29 oz) can sliced peaches, drained

Directions:

  1. Preheat oven to 375 degrees.
  2. Mix together baking mix, milk, and nutmeg in an 8″ square baking dish. Stir in melted butter until well blended.
  3. Mix peaches, sugar and cinnamon in a bowl until peaches are well coated. Spoon peaches over the top of the batter.
  4. Bake for 50 to 60 minutes until top is golden brown and set.

      It’s simple and fills the craving. Nothing like peeling peaches and homemade topping but this is great for a weekday treat.

      In the US the brand name is Bisquick. It is an all purpose baking mix of flour, shortening, baking powder, etc… that you can add milk or eggs to to make pancakes, biscuits, cakes, etc…. It is a short cut. They have online recipes for it too that you can store for up to 3 months in the fridge.

          This is a simple one that is great for weekdays. Nothing will ever really replace the old peel the peaches and homemade topping but this is a nice quick substitute that people made in the 60s and 70s in the US.
