Bananas Foster French Toast Cassserole

We just got the announcement that my daughter will be going back to college in the fall. They are doing a hybrid of in person classes, on-line classes and some classes will include both. They are not having any breaks from September 2nd to November 20th when they will break for Thanksgiving. After that students will be on-line exclusively from home for the last two weeks of classes and finals in December. As long as Coronavirus cases don’t increase during the time school is in session that is the plan. My daughter is so excited. She can start to plan now. Everything had been on hold for so long and now she can move forward.

The other good news she got this week was that they are opening the library where she works, as a page, and she can return July 1st. Also, her dance teacher the school back up so they will have in person dance camp in August. It will be a bit different but they will still be together in person. Things are finally looking up!

Verdict: This is SUPER rich and delicious. This would make an amazing addition to a brunch for a sweet treat or a dessert. Makes plenty for leftovers too if serving for a family breakfast or dinner.

Bananas Foster French Toast Casserole

  • Servings: 12-15

Ingredients:

  • 1 package brioche hamburger rolls, 8 count
  • 1/2 cup butter
  • 1 1/2 cup brown sugar divided
  • 2 teaspoons cinnamon divided
  • 3 teaspoons vanilla divided
  • 5 bananas, ripe, peeled and sliced into 1/4″ slices
  • 8 eggs
  • 1/4 teaspoon nutmeg
  • 1 cup half and half
  • 1 cup whole milk

Directions:

  1. Grease 9×13″ baking dish.
  2. Tear rolls into 1″ pieces and set aside.
  3. Melt butter over medium high heat in large skillet until melted.
  4. Add 3/4 cup brown sugar, 1 teaspoon cinnamon and 1 teaspoon vanilla. Stir until mixture thickens then add bananas and stir until bananas are coated. Remove from heat and set aside.
  5. In a large bowl, beat eggs until light colored. Beat in remaining brown sugar, cinnamon and vanilla. Add nutmeg, half and half and milk stirring until well mixed.
  6. Add rolls to egg mix and gently stir until bread has soaked up liquid.
  7. Pour bread mixture into prepared baking dish. Pour banana mixture over bread mixture. Cover with plastic wrap and refrigerate overnight.
  8. Preheat oven to 350.Remove plastic wrap and bake for about 50 minutes until golden brown.
  9. Remove from oven when center is set. Serve hot with melted butter and maple syrup as desired.
