So my family is in kind of a weird spot right now. We haven’t really shared this at all with anyone but one of my son’s friends is being tested for Covid-19. We just found out yesterday. The issue is that he was at our house last Thursday. We have only had about 4 people in our house since this all began in March and he was 1 of them. So, now we are waiting. I had started coming down with something on Sunday – a cold, the flu, I don’t know. But, I have several underlying issues that makes my lungs susceptible to all kinds of things like bronchitis, etc… Not good if I get Covid. So, we are waiting for his results. My doctor is watching me just to be careful. So, we are in a weird space because we are all locked down. No one goes out at all now. No work, no groceries, nothing. Well, hopefully in a few days we will at least know for sure what is going on.

On a better note Breakfast for Dinner again! Our weekly breakfast for dinner was a Betty Crocker recipe that I found when I was looking for inspiration on waffles. It sounded so good I had to try it.

Verdict: This was a super hit! It is an easy meal to make in no time. The kids loved the walnut topping and want to try it over ice cream! I served this with bacon and fruit salad to complete our meal.

Maple Walnuts Pancakes

  • Servings: 5-6 pancakes

Ingredients:

Maple Walnuts

  • 1 cup real maple syrup
  • Pinch of salt
  • 1 cup chopped walnuts, toasted

Pancakes

  • 2 cups Original Bisquick mix (American baking mix)
  • 1 teaspoon ground cinnamon
  • 1 cup milk
  • 2 eggs
  • 1/4 cup real maple syrup
  • 1 teaspoon vanilla

Directions:

  1. In 2-quart saucepan, heat 1 cup maple syrup, 1 teaspoon vanilla and the salt to boiling over medium-high heat. Stir in toasted walnuts; heat about 3 minutes or until warmed through. Set aside.
  2. Brush griddle or skillet with vegetable oil, or spray with cooking spray. Heat over medium-low heat.
  3. In medium bowl, stir Bisquick mix, cinnamon, milk, eggs, 3 tablespoons maple syrup and 1 teaspoon vanilla with whisk until blended.
  4. For each pancake, pour slightly less than 1/4 cup batter onto hot griddle. Cook about 30 seconds or until edges are dry. Turn; cook other side until golden brown.
  5. Serve pancakes with butter and maple walnuts.

      Thank you! We only have had like 4 people in our house since March. We feel we were getting complacent in our thinking that we were being careful. We are waiting to see what the results are.
