Slow Cooker Chicken Nachos

So we are easing into this school year thing. My son is actually really funny with clothes this year. He has NEVER in 13 years planned his first day of school outfit before the morning he is going to school. This year we had the fashion show for first day senior year. It is funny the changes that are occurring. He has his clothes all laid out for his half day on Friday.

He is only in school from 7:45 to 11:00 am. They have laid out the school in a one way traffic pattern so I think this day is to mostly get them used to being in school and moving through the school. There are only two small points where the traffic is two way and one is in the music wing and it just cannot be helped because the only way to get from there or to there from the main school building is down one hallway.

He is already concerned because he has two classes in that wing. He has always been able to go in and walk through the school a few days before hand to see where his classes are and let him relax and know that he is okay. Students with autism have a hard time with change so each school year is a new round of anxiety and panic. This year with Covid-19 he has not been able to do that so we are reassuring him all will be well and it will.

We let him choose dinner the other night to have some control. The meat was chicken so he chose Chicken Nachos. I thought that was a super idea because it is one of the easiest meals to make.

Verdict: Since I had raw chicken and no precooked chicken, vacation has thrown me off my game, cooking the chicken in the slow cooker was the way to go so that I could cook dinner without having to pay attention to it.

Adding a green salad to this made a perfect meal. My kids like to put the nachos over the salad and eat it all together.

Chicken Nachos

  • Servings: 6-8
  • Difficulty: easy

Ingredients:

  • 1 lb chicken breast
  • 2 tablespoons cumin
  • 2 tablespoons chili powder
  • 2 teaspoons garlic
  • 1 teaspoon Cayenne pepper, more or less to taste
  • 1 teaspoon black pepper
  • 1/2 cup chicken stock
  • 1 large bag tortilla chips
  • toppings for nachos as desired: chopped onions, tomatoes, salsa, sour cream, olives, bacon, cheeses, etc…

Directions:

  1. Mix together the cumin, chili powder, garlic, Cayenne pepper, and black pepper in a small bowl until well blended. Rub the spices on the chicken breasts and place them in the bottom of the slow cooker. Add the chicken stock to the slow cooker. Cover and cook on low for 5-6 hours until meat pulls apart easily with 2 forks. Do not overcook or meat will be dry!
  2. Shred chicken and place on a separate plate when cooked.
  3. Preheat oven to 400 degrees. Prepare a rimmed baking sheet by covering with aluminum foil and spraying with non-stick spray.
  4. Place a layer of chips on the bottom of the pan (about 1/3 of the bag). Sprinkle with shredded chicken and any toppings you desire to be warmed. Finish the layer with a generous topping of your choice of cheese.
  5. Repeat the layer two more times ending with a generous helping of cheese on top.
  6. Bake for 8-10 minutes until cheese is melted and other ingredients are warmed.
  7. Remove from oven and serve hot with salsa, taco sauce, sour cream, shredded lettuce, etc… as desired.
