Spaghetti with Salmon and Dill Cream Sauce

We are continuing with the comfort food for dinners. This creamy flavorful dish has all the things we want right now in comfort food.

Verdict: My family said this reminded them of grown-up tuna noodle casserole. It was more fancy and flavorful that regular tuna noodle casserole but still had that same taste to them.

Spaghetti with Salmon and Dill Cream Sauce

Ingredients:

  • 2 pounds salmon, thawed if frozen
  • salt & pepper, to taste
  • flour
  • 1/4 cup olive oil
  • 1/4 cup butter
  • 1 cup chicken stock
  • 1 tablespoon lemon juice
  • 4 cloves garlic, finely minced
  • 2 cups heavy/whipping cream
  • 1/4 cup fresh dill chopped
  • Optional garnish: fresh parsley, Parmesan cheese
  • 1 (16 oz) box spaghetti or other pasta

Directions:

  1. Cook pasta to al dente according to package directions. When water begins to boil begin making the sauce.
  2. Salt and pepper the salmon and coat it with flour.
  3. Add the oil and butter to a skillet over medium-high heat. Once the pan is hot, add the salmon and cook it for about 2 minutes per side, then take the fish out of the pan and set it aside.
  4. Add the chicken stock, lemon juice, and garlic to the pan. Let it bubble for about 30 seconds to become fragrant. Reduce the heat to medium.
  5. Add the cream, dill, and salmon into the pan. Break the fish up with your spoon into bite-size pieces. Cook it for a few more minutes until it’s cooked through and the sauce has reduced and thickened.
  6. Drain the pasta and add it to the skillet. Toss it & serve immediately with parsley and Parmesan cheese if desired. To thin sauce as needed add a bit of the starchy water from the cooked pasta if desired.

      My family likes salmon so I am lucky. They will eat it just about any way I cook it.

  4. You mentioned spaghetti. Mother used a recipe with vegetable pasta and Alfredo mushroom sauce. Payday comes I will get the items.
