Breakfast Burritos (that also make a great dinner)

Simple, simple dinners are the way to get through this week. We are getting ready for Thanksgiving feasts and possibly social distancing with family. We are busy. This meal is super easy AND each person can make their own burrito just the way they want.

Verdict: We all loved these. For those that like heat a hot salsa or hot sauce across the top adds tons of flavor to the dish. Want something a bit more tame? Sour cream alone or with a sprinkle of fresh herbs works too.

These are super filling, I could only eat one. But we had leftovers for the next morning and they made for the kids to have a super fast breakfast before heading to online school. Serve with a side of fruit salad if you like.

Breakfast Burritos

  • Servings: 6-8
  • Difficulty: easy

Ingredients:

  • 12 large eggs
  • 1 (28 oz) bag potato rounds
  • 1 (16 oz) tube of breakfast sausage or 16 oz package of bacon
  • 1 onion, diced
  • 1 jalapeno, seeds removed and diced
  • 1 package of burrito sized flour tortillas
  • toppings as you like: shredded cheddar cheese, sour cream, salsa, hot sauce, spices, etc…

Directions:

  1. Bake potato rounds according to package directions. Bake to crispy.
  2. While the potatoes are cooking cook the meat for your burritos and prepare onion, pepper, and grate cheese.
  3. Just as potatoes finish cooking scramble eggs to your desired firmness.
  4. Heat tortillas in oven until warmed and pliable.
  5. Layer eggs, rounds, meat, cheese and vegetables to your liking. Top as desired and serve warm.

  1. My Son-in-Law makes breakfast burritos when on the houseboat. They’re so good and very similar to yours! I’m ready for one now. 😀😋

    Burritos are amazing! I’ve never had a breakfast one though! My friend who lives in colorado says I have to try them with green chili sauce on them…I cant wait to be able to visit her and try them out!

      Breakfast Burritos are huge in the southwest. I never had one until a few years ago. Green enchilada verde sauce would be perfect on them.
