I love sun-dried tomatoes. We went on a Costco run a few weeks ago and while we were there I saw a jar of sun-dried tomatoes. Seeing as a small jar runs me about $4.99 in the grocery store the jar they had was only $8.99, on sale! Great buy, right? Yeah. I didn’t realize how large of a jar I was buying. So now we are using sun-dried tomatoes in everything. I think I will make some homemade sun-dried tomato pesto next. But, every dish or meal we are having sun-dried tomatoes because I hate wasting things.
Verdict: This dish was amazing! Want a semi-homemade dish that seems like something you could get in a restaurant that is super simple and elegant enough to serve on special occasions? This is it! The wine, the butter, the tomatoes, and spinach,
I served this with a green side salad and a glass of wine to complete the meal.
1 (32 oz) bag cheese ravioli, (I used frozen but use your favorite!)
2-3 handfuls fresh baby spinach, large stems removed
6 oz. sun-dried tomatoes, – drained,dried and chopped
1 tablespoon of oil from the sun-dried tomato jar
2 cups heavy cream
2 cups Parmesan cheese, finely shredded
1/2 cup white wine, use something you would drink
1/4 cup butter
3 cloves garlic, crushed
3 teaspoons Italian seasoning
Directions:
Begin water to boil ravioli according to package directions. When ravioli is done, drain well.
In a large saute pan, add the oil from the sun-dried tomato then melt the butter into the oil over medium heat. Add the Italian seasoning and whisk together.
Add the minced garlic to the pan and cook for about 1 minute, or until the garlic is fragrant, not burnt. Add the wine to the pan and simmer for about 2 – 3 minutes.
Stir in the heavy cream and bring just to under boil, then keep at a slow simmer for 6 – 8 minutes, whisking occasionally. Be careful not to boil!
Reduce the heat to low and add Parmesan whisking to combine.
Stir in the spinach and sun-dried tomatoes into the sauce. Add ravioli and gently stir and spoon the sauce over the ravioli to coat them.
Serve hot with additional Parmesan cheese for topping.

Could you freeze a portion of the sun-dried tomatoes or do you think that it will compromise their quality?

I am going to need to investigate that. I am using most of it in a pesto later. Yum!
