Bacon Chicken Bites

Graduation, Senior Car Parade, and Baccalaureate are all this week. We are so close to being done. As much as I don’t want it to all end we are all now ready for this. It seems to drag on for weeks and gets so tiring. We even decided to do our son’s graduation party in July as it is easier because everyone was cramming theirs into these last weeks and first two after schools out.

We are still trying to keep dinners simple yet still cooking at home. These are so simple especially if you have prepared your chicken ahead of time. When we freeze our chicken breasts we leave a couple whole but also cube some and fillet some so that when we thaw them they are ready to use in the form we need. If you have cubed chicken breasts done these come together so easily. Even if you have to cube the chicken just add 15-20 minutes to cube the chicken first.

Verdict: The bacon on these is not crispy but more chewy and flavorful. This would be good as bacon wrapped shrimp, pork, cocktail wienies, or even scallops. We cannot wait to try it in other forms. These would also made a great appetizer for a party. Serve with toothpicks.

To complete the meal we served green beans, mashed potatoes, and a green side salad.

Bacon Chicken Bites

  • Servings: 30-32 pieces

Ingredients:

  • 1 1.5 pound package Bacon, good quality
  • 2 lbs Chicken breasts, boneless skinless
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 cup Brown sugar, firmly packed
  • 1/4 tsp Cayenne pepper
  • 1 tbsp Chili powder
  • 1 tsp Paprika

Ingredients:

  1. Preheat oven to 350 degrees. Cover a large rimmed baking sheet with aluminum foil.
  2. Mix garlic powder, onion powder, brown sugar, Cayenne pepper, chili powder, and paprika together in a medium bowl until well combined.
  3. Cut chicken into cubs about 1 – 1 1/2″. Cut bacon strips in half.
  4. Roll each bacon cube in 1/2 strip of bacon and then roll in the brown sugar mix and place on the baking sheet leaving space between each bite.
  5. Bake for 20-25 minutes then flip them over and bake for another 10-12 minutes until done.
  6. Remove pan from oven and let rest for a few minutes before removing to serving plate. Serve with toothpicks if desired for an appetizer or over rice, potatoes, or pasta for a meal.
