I do not have a picture of tonight’s dinner. It was one of those nights that we made dinner and dashed out of the door to go to meetings and events. But, the dinner itself was amazing and my children loved it even though they were not too sure about the cooked pineapple in a stir-fry.
My version of Chicken, Broccoli and Pineapple Stir-Fry started with this recipe from Dole.com.
Ingredients
- 2 teaspoons olive or canola oil
- 1/2 pound boneless, skinless chicken breasts, cooked
- 1 medium onion, thinly sliced
- 3 cloves garlic, finely chopped
- 1 cup low sodium chicken broth
- 1/4 cup lite soy sauce
- 1 tablespoon cornstarch
- 2 cups broccoli, cut into florets
- 1 red bell pepper, cut into chunks
- 1 can drained Dole pineapple, chunks
Directions
- Heat oil in non-stick wok or large skillet. Add onion and garlic to pan; stir-fry 2 minutes until slightly browned.
- Combine broth, soy sauce, cornstarch; add to pan. Add broccoli and bell pepper. Cover, cook 5 to 10 minutes or until broccoli is tender. Stir in pineapple and chicken. Heat through.
