There is a story to go with the strange picture of our dinner above. There always is….
I made dinner last night but went out to dinner with friends. As it wasn’t completely cooked by the time I left I asked my daughter to take it out and take a picture of it before they ate it. She forgot to take the picture. This is all that was left in the bottom of the ramekin when I got home later.
This was an easy throw together kids meal. This is not how I would make Cheesy Potatoes if it were for me but this is what my kids love.
Ingredients
- 5 large potatoes
- 6 oz cheese (I used cheddar, mozzarella, and Monterey jack because that is what I had on hand)
- 3 oz. cubed ham- precooked
- salt and pepper
- extra cheese for top of dish
- Pre-heat oven to 350 degrees.
- Using a Mandolin or other slicer cut the potatoes thin. You will not be able to get uniform thin cuts with a knife and your potatoes will burn before they cook through.
- In a casserole dish, sprayed with non-stick spray, later potatoes in the bottom of the dish. Follow with 1/3 of the cheese and then 1/3 of the ham. Lightly salt and pepper. Repeat layers until all ingredients are gone.
- Top with the extra cheese and bake until a fork inserted in the center goes in easily, about 45 minutes.
- Remove and let sit for 5 minutes before serving.
My children love this dish. It has all their favorite things – Cheese, potatoes and ham.
