Cheesy Ham and Broccoli Casserole

Having left over ham from last night’s Hawaiian Pizza I created a casserole with bits and pieces I found in my cupboards and refrigerator.  I usually don’t follow a recipe when making casserole because too often they contain a can or two of Cream of Something soup.   Having a gluten-free son we don’t use creamed soups or canned soups so I usually just make things up as I go along.

Ingredients:

  • 2 uncooked cups of long grain rice
  • 2 heads of Broccoli florets cut small
  • 1 cup of sour cream
  • 1/2 cup of fat-free half and half
  • 1 cup of cheddar cheese
  • 1/2 cup of grated Parmesan cheese
  • salt and pepper to taste
  • diced ham steak – 12 oz.
  1. Pre-heat oven to 350 degrees.
  2. Cook rice until done according to package directions.
  3. Steam broccoli florets for about 15 minutes until still al dente but well cooked.
  4. When rice is finished place in a large bowl.  Add in sour cream, half and half, 1/4 cup of Parmesan cheese, salt and pepper, ham and broccoli florets.  Stir well.
  5. Place in a greased 13×9 inch casserole pan.
  6. Sprinkle with remaining Parmesan cheese.
  7. Bake 25-30 minutes until warm in the center and cheese on top is starting to slightly brown.
  8. Let sit 5 minutes before serving.

My family is loving the different recipes each night but they all agreed this was a nice warm comforting meal tonight.
